I baked this Banana Wholemeal Cake over the weekend. The cake is soft and consider quite a healthy banana cake with the combination of plain flour and wholemeal flour and little sugar was also used. It was quite a small cake (I baked it in a small loaf pan) and definitely didn’t last long in our home during our afternoon tea time.
Banana Wholemeal Cake
Ingredients
- 70 g butter
- 35 g brown sugar
- 80 g egg - lightly beaten
- 1/2 tsp vanilla extract
- 200 g riped banana - mashed
- 90 g wholemeal flour
- 90 g plain flour
- 1 tsp baking powder
- 1 tsp baking soda
1-2 pcs banana - sliced- light muscovado sugar or granulated sugar to sprinkle
Instructions
- Prepare 8 x 4.5 inch rectangular baking pan, lined the bottom with parchment paper. Preheat the oven to 180 deg C.
- Beat butter at medium speed until smooth. Then add in brown sugar gradually and beat well.
- Add in beaten egg and vanilla extract at low speed, followed by mashed banana, mix well.
- Sift plain flour, baking powder and baking soda into banana mixture, followed by wholemeal flour. Then fold well to combine with a rubber spatula.
- Pour banana batter mixture into the baking pan and smooth the surface with a rubber spatula. Place banana slices on top and sprinkle some muscovado sugar on top.
- Bake in the preheated oven for about 40-45 minutes. Leave cake to cool before serving.

香蕉全麦蛋糕
材料:
- 70克 牛油
- 35克 赤糖
- 80克 鸡蛋,打撒
- 1/2茶匙 香草香精
- 200克 熟透香蕉,压烂
- 90克 全麦面粉
- 90克 普通面粉
- 1茶匙 发粉
- 1茶匙 苏打粉
- 1-2条 香蕉,切片
- 原蔗黑糖或砂糖适量,撒面
做法:
- 准备一个小长方形烤盘 (8 x 4.5寸)底部铺纸。预热烤箱至摄氏180度。
- 用中速度把牛油打滑。然后慢慢加入 赤糖搅打匀。
- 转入低速度,慢慢的加入鸡蛋,香草香精和香蕉,搅拌均匀即可。
- 接着倒入全麦面粉和筛人普通面粉。用刮刀翻拌均匀即可。
- 最后将香蕉面糊倒入准备好的烤盘,用刮刀抹平。铺上香蕉片,撒上适量的原蔗黑糖或砂糖。
- 放入预热烤箱烤约40-45分钟便可待凉切片享用。
- 香蕉蛋糕加了全麦/普通面粉蛮松软的又不是很甜。蛋糕做出来不是很大,所以一个下午就被解决掉了!
