Broccoli Vegetable Soup 西兰花菜汤

This smooth blended Broccoli Vegetable Soup, full of high fiber is healthy and nutritious which is essential for our diet. You can prepare  this easily and within 30  minutes, it can be served on the table. This delicious comforting soup goes very well with crusty bread.

 

 

Broccoli Vegetable Soup

Ingredients
 

  • 600 g broccoli
  • 2 sticks celery
  • 1 large onion
  • 1 tbsp chopped garlic
  • olive oil
  • 1 litre vegetable or chicken broth - Swanson brand
  • salt and pepper to taste

Instructions
 

  • Trim the broccoli stems and sliced. Cut broccoli to florets, soak in salt water for a few minutes, then rinse and drain. Chop celery and onion into pieces.
  • Heat pot with olive oil at medium heat, fry onion for a few minutes. Add garlic, broccoli stems and celery, fry for another 2-3 minutes until fragrant.
  • Then add vegetable broth and bring to boil. Cover with lid and simmer for 2-3 minutes at medium heat. Lastly add broccoli florets and simmer for another 2-3 minutes until vegetables softened.
  • Leave vegetable soup to cool down a little and blend the vegetable to smooth.
  • Heat up broccoli soup again and add salt and pepper to taste. Serve immediately.

西兰花菜汤

材料:

做法:

  1. 用小刀除去西兰花根部的皮,切片。西兰花切小朵。在盐水中浸泡几分钟后,冲洗滤干。将西芹和洋葱切小。
  2. 用中火热锅加油,将洋葱炒几分钟。加入蒜蓉,西兰花根片和西芹,再翻炒至香。
  3. 倒入菜汤大火煮至滚。再转入中火盖上盖闷煮2-3分钟。最后放入西兰花朵,再闷煮2-3分钟至菜变软。
  4. 待菜汤稍微冷却后,用打碎器把烫里的菜全部打烂至滑。
  5. 再将西兰花菜汤加热,撒上少许盐和胡椒粉即可享用。
