Cornflake Cookies 粟米片小饼干

My friends and family love my Cornflake Cookies and it is their all time favourite. I used to make these fragrant and crispy cookies for festive seasons or at someone’s request.   So happens that I still have some cornflakes left in my pantry and without second thought, I made these cookies again for ‘Little Thumbs Up’ event. It is a very simple drop cookie recipe that I’m sure you will enjoy very much and they’ll be gone within a day.

Ingredients
  • 250g Butter, soft to touch
  • 175g Icing sugar
  • 1 Egg
  • 1tsp Vanilla powder/vanilla extract
  • 350g Plain flour
  • 1 tsp Baking powder
  • 160g Cornflakes (use hand to crush slightly so that you can still feel the crisp of cornflakes after baked)
  • 50g Black currant or dried cranberry if you like
Instructions
  1. Sieve and combine plain flour, baking powder and vanilla powder together with the crushed cornflakes and black currant, set aside.
  2. Cream butter, egg and icing sugar together till white.
  3. Pour in all the plain flour mixture to the butter mixture and mix them together at low speed (do not over beat), then mix well with a spatula.
  4. Shape the cookie dough using a dessert spoon then using a butter knife to push the dough down onto the baking sheet.
  5. Bake at preheated oven 180 degrees C for about 15 mins. Then cool the cornflakes cookies completely and store into an airtight container.

  • 250克 牛油, 稍软
  • 175克 糖粉
  • 1个 鸡蛋 (全蛋)
  • 1茶匙 香草粉/香草香精
  • 350克 低筋面粉 (过筛)
  • 1茶匙 泡打粉(过筛)
  • 160克 粟米片/玉米片 (稍微压碎)
  • 50克 葡萄干
Instructions
  1. 将过筛面粉, 泡打粉,香草粉及粟米碎片混合均匀,备用。
  2. 牛油,鸡蛋和糖粉用电动打蛋器打至发白。
  3. 倒入全部的粉类料,以低速度搅拌一下;然后用橡皮刮刀搅拌至成软面团。
  4. 用小汤匙取出适量的面团,直接放在烤盘上(底部铺纸)。
  5. 放入预热烤箱,以180度烤约15分钟或金黄色即可。待饼干冷却后,待凉装罐即可。
