Delicious Celery Soup 西芹浓烫

This delicious celery soup is very healthy and and high in nutrients, as celery is rich in vitamin C.  Celery soup is often referred to as a weight loss soup as it provides low-calorie dietary fiber. It helps to lower cholesterol levels and reduces high blood pressure. 

This is also a great way to use up the vegetable since I had some leftover celery from making a salad. Preparation is very simple as you only need to combine just a few ingredients and get them blended together to produce this tasty soup.  You can serve this delicious celery soup as a light meal, served with crusty bread or as a starter.

Delicious Celery Soup

You can serve this delicious celery soup as a light meal, served with crusty bread or as a starter

Ingredients
 

  • 500 g chopped celery
  • 300 g onion
  • 2 tbsp chopped garlic
  • 2 tbsp butter - or olive oil
  • 1.5 tbsp plain flour
  • 1000 ml chicken broth
  • 2 bay leaves
  • salt to taste

Instructions
 

  • In a pot, melt butter and add chopped onion and saute for about one minute. Pour in chopped celery and garlic, continue to saute for another 2-3 minutes till vegetables become soft. Sprinkle plain flour over the vegetable and mix well.
  • Pour in chicken broth and bay leaves, bring to boil. Then lower heat and simmer for about 30 minutes.
  • Turn off heat and puree the soup mixture (discard bay leaves) with a hand blender till smooth.
  • Turn on heat again and bring the celery soup to a boil with some salt to taste and serve immediately with a dash of black pepper. Best to serve with crusty bread.

西芹浓烫 Delicious Celery Soup

  • 这款健康西芹浓汤(也有人叫它为瘦身汤)有特殊的芹菜和洋葱香味,是一道非常容易做的西式汤。
  • 西芹含有丰富的维他命C,营养价值高,可降低血压和胆固醇

材料:

  • 500克 西芹,切小
  • 300克 洋葱,剁碎
  • 2汤匙 蒜蓉
  • 2汤匙 牛油或橄榄油
  • 1.5汤匙 中筋面粉
  • 1000毫升 鸡汤 ((Swason牌)
  • 2片 月桂叶
  • 盐适量 (可不加)

做法:

  1. 放牛油在锅里,用中火翻炒洋葱碎炒约一分钟。加入西芹和蒜蓉,再炒越2-3分钟至菜变软;撒上面粉,翻炒几下。
  2. 倒入鸡汤和月桂叶,煮滚后以小火焖煮约30分钟,熄火。
  3. 用打碎器把烫里的菜料全部打烂至滑(先把月桂叶拿掉)。
  4. 然后再开火煮滚,撒上少许盐和黑胡椒粉即可搭配面包享用。
