Dorayaki (Japanese Red Bean Pancake)

Dorayaki (Japanese Red Bean Pancake) ~ら焼き 铜锣烧~  is a popular sweet snack in Japan. It’s two pieces of fluffy honey pancake sandwiched with a spread of azuki paste (also known as anko). It’s quite easy to make Dorayaki at home to serve as a snack for the kids to enjoy especially during the school holidays. Not much effort is needed to make this delicious snack which can be done in a relatively short time. I used the leftovers of red bean paste for making mooncakes during the Mid-Autumn Festival. You don’t have to grease the pan with oil. Just drop in a ladle of batter on the pan and wait for a minute for bubbles to appear on the surface of the pancake. Then flip it over and cook for about 45 seconds to a minute. You may take a little longer time to cook if you want a thicker pancake. Then sandwich with a spread of red bean paste and serve the pancake immediately.

Dorayaki (Japanese Red Bean Pancake)

Ingredients
 

  • 2 eggs
  • 1/2 tsp vanilla extract
  • 50 g caster sugar
  • 1 tbsp honey
  • 40 ml fresh milk
  • 100 g plain flour (all purpose flour)
  • 1/2 tbsp baking powder
  • 1/4 tsp baking soda
  • red bean paste

Instructions
 

  • Combine flour, baking powder and soda together in a bowl, set aside.
  • In an another bowl, whisk egg, vanilla extract and sugar together. Add honey and milk, stir mixture well again.
  • Sieve in flour mixture in two portions, stir well to smooth. Then cover with cling wrap and rest for 15 minutes.
  • Heat up a flat frying pan at low heat, scoop a ladle of batter onto pan for about a minute. when bubbles appear on the surface. Flip pancake over and cook for about 45 seconds to 1 minute. Repeat this process until batter uses up.
  • Cool down the pancake on wire rack and spread red bean paste (about 10g) on one cake and sandwich with another cake. Best to serve immediately.

  • 2颗 鸡蛋
  • 1/2茶匙 香草香精
  • 50克 细砂糖
  • 1汤匙 蜂蜜
  • 40毫升 牛奶
  • 100克 中筋面粉
  • 1/2汤匙 泡打粉
  • 1/4茶匙 苏打粉
  • 做法:
  1. 将面粉,泡打粉及苏打粉混合均匀,备用。
  2. 将鸡蛋,香精和砂糖搅拌均匀。加入蜂蜜和牛奶,再搅拌均匀。
  3. 粉类分2次筛入,搅拌均匀即可。盖上保鲜膜静置15分钟。
  4. 加入平底锅,舀入一勺面糊,以小火煎约1分钟至表面出现气泡,就可以翻面,再煎约45秒-1分钟左右即可。
  5. 待凉饼皮,抹上适量红豆馅(约10克)在饼皮上,再盖上另一片饼皮即完成、就可马上享用!
