Grapefruit Jelly

I love grapefruit as they are an excellent source of Vitamin C, a vitamin that helps to support the immune system and also commonly known to be protective against cold flu. As there were a lot of ‘not so sourish’ grapefruit in the market recently, I grabbed 3 fruits home. I love to eat them by slicing them horizontally and scooping out sections of the halves with a spoon. After making the Grapefruit Butter Cake, I’ve been thinking why not try to make them into jelly. So this is the lovely Grapefruit Jelly that I’m sharing with you today. This healthy dessert is very refreshing, soft and tangy, you’ll definitely go back for more.
  Ingredients:
      Method:
  1. Peel grapefruit and remove pulp in a drainer keeping the juice in a bowl (about 2 tbsp or slightly more).
  2. Soak gelatine powder with 5 tbsp of water and set aside for 5 minutes.
  3. Put water and sugar in a pot and heat to  almost boil, add honey and stir well till dissolved , pour in the grapefruit juice drink, stir to boil.
  4. Then add soaked gelatine in it, stir till gelatine dissolved and bring to light boil for 5 minutes.
  5. Off heat and add in fresh grapefruit juice and pulp, stir well and pour into serving cups.
  6. Leave jelly to cool in refrigerator for at least 3-4 hours before serve.
