Here is my new creation making Snowskin Mooncake without using a mould. Does this Handmade Snowskin Mooncake look like Japanese Wagashi (和菓子)? I love those wagashi(和菓子) that are always displayed so beautifully in wagashi shop in Japan. They are always so elegant to look at. As the snowskin dough is so soft and easily manageable, it is really easy to make this snowskin mooncake with both your hands and fingers. You can imagine you’re playing with playdough to create different art concepts.

Handmade Snowskin Mooncake
I’ll show you how I made this simple design snowkin mooncake but will not repeat my recipe again, as it is exactly the same as my Snowskin Mooncakes (here)
Roll the colour dough skin into a small round disc, about 5cm in diameter.
Use a smallest cookie cutter (any design) to cut out the shape in the center of the dough as shown. Remember to dip the cutter with some kao fen (cooked glutinous flour) for easy removal of the dough skin from the cutter.
Use a skewer, gently push the dough out of the cookie cutter as shown.
Place the small star dough back to the round dough disc in the center in different colour.
Cover the dough with a plastic sheet and gently roll the dough with a roller pin so that the center dough will stick together.
Then wrap with any filling you like and roll it into a round ball.
Done!
