Honey Cake 蜂蜜蛋糕

This soft and slightly moist Honey Cake tastes just great with the right sweetness to me, at least. It’s a simple cake flavoured with honey and lemon and the sweet aroma wafting through the kitchen during the process of baking was just wonderful. This makes a yummy dessert served with a dollop of ice cream or even on its own with a cup of coffee or tea.

Ingredients
 

  • 200 g plain flour - 1 3/4 cups
  • 3/4 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp cinnamon powder
  • 1/2 tsp salt
  • 2 large eggs
  • 70 g caster sugar or brown sugar - 1/3cup
  • 75 g honey - 1/4 cup
  • 100 g fresh milk - 1/2 cup
  • 85 g vegetable oil - 1/2 cup
  • zest from 1 lemon

Instructions
 

  • Preheat oven to 165 deg C. Grease a 7 inch bundt pan or line a 7 inch round cake pan. Dust with flour; tap out excess. (Better to change to a smaller cake pan, as my 8 inch cake pan is a little too big for this cake)
  • Sift flour, baking powder, baking soda, cinnamon powder and salt together into a bowl. Add lemon zest and mix well. Set aside.
  • Whisk eggs and sugar on high speed until pale and thick.
  • In a cup, combine honey, milk, oil and zest together, Mix well and slowly add into egg mixture at low speed until combined.
  • Add in flour mixture in few batches, mix until smooth, Pour batter into pan.
  • Bake until dark brown for about 40-45 minutes or a cake tester inserted in the center comes out clean..
  • Let cool in pan for about 10 minutes. Then remove cake and cool on wire rack.

  1. 预热烤箱至摄氏165度。一个7寸空心烤盘或7寸圆形烤盘,铺纸涂油撒粉。再将多余的粉倒出。(我用的是8寸空心模有点大了,蛋糕烤出来后觉得很矮)
  2. 粉类及盐一起过筛到一个碗里,加入柠檬皮屑,拌匀备用。
  3. 将鸡蛋和糖快速搅打至发及泛白。
  4. 把蜂蜜,牛奶和油一起混合均匀。慢慢的倒入蛋糊里,用底速度拌匀即可。
  5. 然后分次加入粉类,搅拌面糊至顺滑便可倒入烤盘。
  6. 放进烤箱烤约40-45分钟至深棕色或竹签插入蛋糕内部,拔出没有粘糊,就表示熟了。
  7. 让蛋糕连烤模待凉约10分钟,才取出放在凉架上待凉。
