Lemon Grass Lychee Jelly 香茅荔枝果冻

lemon grass jellyDue to the super hot and humid weather in these two weeks, I decided to make this Lemon Grass Lychee Jelly to beat the heat.  A very refreshing and delicious cold dessert with citrusy lime juice and lemon grass.  This is a very simple recipe using konnyaku powder.  Do try to make this jelly and enjoy this yummy treat in comfort with your family.

Lemon Grass Lychee Jelly

A very refreshing and delicious cold dessert with citrusy lime juice and lemongrass to beat the hot weather

Ingredients
 

  • 1 canned lychee - reserved lychee syrup
  • 120 g caster sugar
  • 1 pkt konnyaku powder
  • 2-3 stalks lemon grass
  • 3 tbsp lime juice

Instructions
 

  • Remove the outer part of lemon grass, clean and bruise the white part with a knife.
  • Drain lychees through a sieve, reserving syrup and top up with water to 950ml.
  • Pour lychee syrup (950ml) into a pot, followed by konnyaku powder and sugar. Turn on heat and stir liquid till sugar dissolved with a hand whisk. Drop in lemon grass and keep stirring liquid until boil, at medium heat, Off heat and continue to stir liquid for another 2-3 minutes.
  • Discard lemon grass. Add a small drop of rose pink colouring and lemon juice into it, stir well again.
  • Drop one or two pieces of lychee into mould, then pour liquid mixture into it. Leave jelly to cool and set in the refrigerator for at least 2 hours or when ready to serve.

香茅荔枝果冻 Lemon Grass Lychee Jelly

做法:

  1. 把香茅外面比较老的一层去掉,只要白色尾端部分用刀大力拍一拍,让香茅的香味流出。
  2. 沥干荔枝,荔枝糖水倒入量杯里加上清水至950毫升。
  3. 将荔枝水(950毫升)到锅里,倒入果冻粉和糖。打开火,用手动打蛋器搅至糖融化。然后加入香茅,搅至滚 (用中火),熄火继续再搅拌2-3种。
  4. 拿掉香茅,加入一滴红色素和青柠汁再搅拌均匀。
  5. 将荔枝(一到两粒)放入摸子或杯子中,然后倒入果冻液,待凉后放入冰箱冷藏最少两个小时至凝固便可脱模享用。
