Lime Cupcakes 酸柑杯子蛋糕

These Lime Cupcakes are buttery,  zesty and refreshing and they blend well with  the soft lime frosting. They are so easy to prepare and perfect to serve for any occasion.

Lime Cupcakes 酸柑杯子蛋糕

Ingredients
 

  • 2 large eggs
  • 150 g butter - softened
  • 100 g caster sugar
  • 75 g yoghurt
  • 115 g self-raising flour
  • zest of 2 limes
  • 1/2 tbsp lime juice

  • Topping
  • 100 g icing sugar - sifted
  • 70 g butter - room temperature
  • 1 tbsp lime juice
  • zest of 1 lime

Instructions
 

  • Preheat the oven to 160 deg C. Line muffin pan with 9 cupcake papers.
  • Lightly beat eggs, add butter and sugar, then mix until light and fluffy.
  • Add yoghurt and flour, stir to combine with a hand whisk. Add lime zest and lime juice, mix well again.
  • Divide the mixture evenly into the cake cases. Bake for 25-35 minutes until risen and golden brown. Allow to cool before icing.
  • Topping ~ Meanwhile, combine the topping ingredients, mix with a rubber spatula or wooden spoon, and spread onto cakes. Top with lime candy or decorate as desired.

酸柑杯子蛋糕

  • 材料:可做9个
  • 2个大鸡蛋
  • 150克 温室牛油
  • 100克 细糖
  • 75克 原味酸奶
  • 115克 自发面粉
  • 2粒 酸柑皮屑
  • 1/2 汤匙 酸柑汁
  • 酸柑糖霜
  • 100克 糖分,过筛
  • 70克 温室牛油
  • 1汤匙 酸柑汁
  • 1粒 酸柑皮屑
  • 做法:
  1. 预热烤箱至摄氏160度。将9个纸杯放入玛芬烤盘内,备用。
  2. 将鸡蛋轻轻打撒,加入牛油和糖,搅打至松发。
  3. 接着倒入酸奶和面粉,用手动打蛋器搅拌至均匀。最后加入酸柑皮屑和酸柑汁,再拌匀即可。
  4. 将面糊分配入9个纸杯里。送进预热烤箱烤约25-30分钟至蛋糕膨胀起且表面金黄即可。
  5. 酸柑糖霜 ~ 将酸柑糖酸糖霜材料用刮刀搅拌均匀,等蛋糕待凉后才涂上糖霜装饰。
