These mini matcha cupcakes not only look cute but yummy too with the soft texture inside.  One can easily pop the mini cake into your mouth at one go.  It is an easy peasy job making these bite sized cuppies as you only require a  mere few minutes of stirring.  The recipe for these healthy and tasty soft matcha cakes call for egg whites and almond meal.   Definitely  a perfect anytime snack for  everyone.

Ingredients
 

  • 28 g cake flour or plain flour - 1/4 cup
  • 1/2 tsp baking powder
  • 1 tsp matcha powder
  • 28 g almond meal (ground almond) - 4 tbsp
  • 20 g icing sugar - 3 tbsp
  • 70 g egg white - 1/3 cup
  • 30 g caster sugar - 2 tbsp
  • 70 g melted butter - 1/3 cup
  • some dried cranberries or chocolate chips - for topping

Instructions
 

  • Combine cake flour, baking powder and matcha powder together and set aside.
  • In a clean bowl, gently stir egg white and caster sugar together with a hand whisk till sugar dissolved.
  • Sift in icing sugar and almond meal, mix well. Sift in flour mixture and mix well again.
  • Lastly pour in melted butter in 3 batches, stir well thoroughly and set aside to rest matcha batter for 10 minutes.
  • Pour matcha batter into small muffin pan lined with cupcake liners. Then top with some dried cranberries or chocolate chips.
  • Baked in preheated oven (center rack) at 180 deg C for about 15-20 minutes.

迷你抹茶蛋糕

材料:

做法:

  1. 将面粉,泡打粉和抹茶粉一起过筛,备用。
  2. 将蛋白和细糖拌打至糖容化(不用大力的打)。
  3. 筛入糖粉和杏仁粉到蛋白里,搅拌均匀。接着筛入粉类(步骤1),再搅拌均匀即可。
  4. 最后将融化牛油分3次倒入抹茶面糊里,再搅拌均匀后静置10分钟。
  5. 将15个小纸杯放在小玛芬烤盘内。倒入面糊,加上适量的蔓越莓干或巧克力粒。
  6. 放进预热烤箱180度 (中层)烤约15-20分钟便可。
