How time flies! Chinese Lunar New Year will be in 3 weeks from now. I’m sure many of you are already busy planning what to bake or cook for the family during the festive holidays.  Here are my orange cookies that are tried and tested. These cookies are orange scented and crisp, a perfect but easy recipe that is done in a short space of time, and they are also great to serve or pack as a gift for Chinese New Year or for any occasions! Another keeper recipe for sure to try 😀

Orange Cookies

Ingredients
 

  • 80 g salted butter - room temperature
  • 50 g caster sugar
  • 50 g egg - lightly beaten
  • 1/2 tsp vanilla extract
  • 1/2 tbsp orange zest
  • 1/2 tsp orange flavour - optional
  • 100 g plain flour
  • 25 g ground almond/almond meal

Instructions
 

  • Beat butter and sugar together till combined at medium speed, about 1 minute.
  • Gradually add beaten egg and vanilla extract (orange flavour), mix well.
  • Sift plain flour into batter followed by ground almond and orange zest. Then use spatula to fold mixture well.
  • Scoop batter into a piping bag with a star nozzle #172 attached. Then pipe on to baking tray with lined parchment paper. Add a piece of chocolate in the center.
  • Bake in preheated oven at 170 deg C for about 30 - 35 minutes or till golden brown.
  • Leave cookies to cool before storing in an airtight container.

香橙曲奇

  1. 将牛油与砂糖用中速度搅打均匀,约1分钟。
  2. 慢慢加入鸡蛋及香精,搅拌均匀即可。
  3. 筛入面粉到蛋糊里,接着倒入杏仁粉及香橙皮屑,用橡皮刮刀翻拌均匀。
  4. 将尖齿花嘴(#172)装入花袋内,再装入面糊挤出花形在烤盘上底部铺纸。然后在花型面糊中心放上巧克力粒。
  5. 放进预热烤箱摄氏170度烤约30-35分钟或至金黄色。
  6. 饼干待凉后放入密封罐保存。
