Ingredients:
- 800g Potatoes
- 1 large Onion – finely chopped
- 200g Prawns – cleaned & devined – cut to cubes, season with salt & pepper
- 1 1/2 tsp Salt
- Plain flour, 2 Beaten eggs, Bread crumbs
Method:
- Peel potatoes and cut into chunks. Boil or microwaves in water until soft. Test with a skewer.
- In a large bowl, mash potatoes with a fork, add onion, prawns and 1 1/2 tsp salt with some pepper. Mix well.
- Prepare 1 small tray each – Plain flour, 2 lightly beaten eggs and bread crumbs.
- Shape potatoes to about 15-17 patties.
- Coat patties with some flour, dip into the beaten eggs and lastly coat with bread crumbs.
- Deep fry into hot oil until golden brown.
- Serve potatoe croquettes with mayonnaise or ketchup.
Kitchen note: can also use canned salmon, tuna or cheese instead of prawns
