Potato Croquettes

Potato croquettes

Ingredients:
  • 800g Potatoes
  • 1 large Onion – finely chopped
  • 200g Prawns – cleaned & devined – cut to cubes, season with salt & pepper
  • 1 1/2 tsp Salt
  • Plain flour, 2 Beaten eggs, Bread crumbs
Method:
  1. Peel potatoes and cut into chunks. Boil or microwaves in water until soft. Test with a skewer.
  2. In a large bowl, mash potatoes with a fork, add onion, prawns and 1 1/2 tsp salt with some pepper. Mix well.
  3. Prepare 1 small tray each – Plain flour, 2 lightly beaten eggs and bread crumbs.
  4. Shape potatoes to about 15-17 patties.
  5. Coat patties with some flour, dip into the beaten eggs and lastly coat with bread crumbs.
  6. Deep fry into hot oil until golden brown.
  7. Serve potatoe croquettes with mayonnaise or ketchup.
Kitchen note: can also use canned salmon, tuna or cheese instead of prawns
