Roast Pork in Cabbage Soup 烧肉白菜汤

Ingredients:
1 kg Chinese Cabbage – cut to about 1″ x 2″ length
300g Roast pork (not too fat) – cut to bite size
50g Dried shrimp – soak for 20 mins, drain & keep water
1 block Tofu – cut to large cubes
2 pips Garlic – crushed
1 litre Chicken broth (click here) or homemade stock
Methods:
  • Heat pot or wok with some oil, stir fry garlic and dried shrimp together until fragrant.
  • Then add cabbage, stir fry for a while then add chicken broth and dried shrimp water~bring to boil.
  • Add in roast pork and tofu cubes~mix well.
  • Bring to boil again and lower heat, simmer for about 30 mins or when the cabbage becomes soft.
  • Check salt level. Add a little more water if necessary because sometime the roast pork is quite salty.
  • Serve hot soup with rice
Dried shrimp are shrimp that have been sun dried & shrunk to small size. They are used in many Asians cuisines, imparting a unique taste.
