This Simple Vegetable Curry is really simple to cook and healthy too. The curry sauce was full of vegetable flavour with only vegetable stock, curry powder, coconut milk and garlic were used. It is not very spicy, just mild yet delicious to serve with hot rice. I was so happy to be able to clear my fridge and used up all my leftovers 😀

  • 150g Broccoli
  • 150g Cauliflower
  • 100g Carrot
  • 100g Long beans
  • 200g Pumpkin
  • 1 Onion
  • few cherry tomatoes
  • 1 tbsp Garlic, chopped
  • 1½ tbsp Curry powder
  • 1½ cup Vegetable stock (Swanson brand)
  • 200ml Coconut milk
  • 2 Fresh chillies
  • ¾ tsp salt and ½ tsp sugar, or to taste

Instructions
  1. Cut broccoli and cauliflower into small chunks. Remove the skin of the onion and peel carrot, cut both into pieces. Long bean cut to section.
  2. Peel pumpkin and cut into pieces (not too small).
  3. Scald all the vegetables in a pot of boiling water except pumpkin for few minutes and drain. Strain the water and reserve 1½ cup water for later use.
  4. Heat a little oil, add onion, garlic and curry powder, stir fry well. Add in all the vegetables and pumpkin and 1½ cup water. Cook for about 10 minutes or until pumpkin is softened.
  5. Add coconut milk, broccoli and cauliflower, cook for a while and it is ready to serve.

简易版咖喱杂菜

材料

做法:

  1. 西兰花,椰菜花切小。洋葱去衣及胡萝卜切件。长痘切段。
  2. 南瓜去皮切件 (不要切太小)。
  3. 将菜类汆水(约1-2分钟),沥干。保留1.5杯的菜水。
  4. 烧热油少许,方洋葱,蒜蓉及咖喱粉炒匀,加入椰菜话,胡萝卜,长痘和南瓜。加入菜水。焖煮约10分钟或至南瓜变软。
  5. 加椰浆,西兰花和调味料煮片刻即可
