Grapefruit Sponge Cupcakes 葡萄柚海绵小蛋糕
- 25g Canola oil
- 40g Freshly squeezed grapefruit juice
- 3 large Cold eggs from fridge
- 95g Caster sugar
- 100g Cake flour/plain flour
- ¼ tsp Salt
- Zest and pulps from 1 grapefruit
- Mix canola oil and grapefruit juice together, set aside.
- Sift flour and salt twice together, set aside.
- In a mixing bowl, add cold eggs and sugar, whisk at high speed for 3 mins, till thick and fluffy , medium speed for 10 mins and low speed for 1 min.
- Continue beating at low speed, add in grapefruit zest and pulps, add flour spoon by spoon followed by canola oil and grapefruit juice. Do not over mix. Turn off machine and use a rubber spatula to fold the batter till well combined.
- Pour batter into a lined 12 holes muffin pan until 90% full. Lightly tap on counter top twice to remove air bubbles.
- Bake at pre-heated oven at 170C for 25 mins at middle rack of the oven.

- 将菜籽油及葡萄柚汁混匀,备用。
- 面粉和盐过筛两次,备用。
- 用高速度将冷鸡蛋和细糖打致松发约3分钟,然后中速度搅打10分钟和转入底速度继续搅打1分钟即可。
- 在慢速度搅打期间,加入葡萄皮屑及果肉。下来慢慢加入面粉,油和葡萄柚汁。。不要过度的搅拌。然后用刮刀将面糊翻拌均匀即可。
- 最后将面糊舀入12个纸杯至9分满。轻轻把空气敲出。
- 放入预热烤箱中层以摄氏170度烤约25分钟即可。

Hi Ann, thank you for sharing this lovely recipe. I had an issue with my cupcakes when I tried this recipe yesterday. My cupcakes turned very hard after they cooled down. Could you please advise how can I improve to make them fluffy like yours. Thank you.

The batter must be whisked at high speed to thick and fluffy like the way you’re making a sponge cake. You must not over mix the batter after adding in the flour as it’ll creates gluten and the cake becomes hard after baked.

Hi Ann, I followed your tip and the cupcakes this time turns out very delicious, soft and fluffy on the top 50%. The bottom 50% where the zest & pulps sunk, is hard and does not look or taste like the top 50%. It’s chewy & slightly hard. Any advice to bake beautiful perfect cupcakes like yours?
Hi Lee, The oil is heavy and is not well mixed in the batter that causes the bottom hard or like ‘kueh’ texture.

Hi Christina, The browned top was due to my hot oven. I saw most of them who baked this cake got a nice golden colour.
It might be the oil and juice not properly mix in the batter. For more detail in making this cakes, you can visit Sonia's blog. She stated clearly the speed of mixing batter.

I have never use Grapefruit before…..aigh I had two bagful of this grapefruits from cousin when I was holidaying in NZ but didn't do anything with it except to blend into juice. If only you have posted it much earlier…..
