Ingredients:
8 Large prawns
40g Vermicelli (glass noodle)
10 cloves Garlic
3 tsp Ginger
7 tbsp Water
2 tbsp oil
Seasonings:
1 tbsp Chinese cooking wine (花调酒)
1 tsp Oyster sauce
1tsp Light soy sauce
1/4 tsp Salt
1/4 tsp Sesame oil
1 tsp sugar
Vermicelli Marinade
1 tsp Chinese cooking wine
1/4 tsp Salt
2 tsp oyster sauce
a dash of pepper and sesame oil
Method:
- Peel ginger and garlic, rinse and chop finely respectively.
- Soak vermicelli in water for 30 minutes until it is soft. Cut into 4 cm in length.
- Cook it in boiling water and then rinse with cold water. Drain and mix it with the Marinade. Place it on a steaming plate.
- Rinse prawns. Remove prawn feelers and legs. Cut into halves and de-vein. Place prawns onto the vermicelli.
- Heat up 2 tbsp of oil. Fry chopped garlic and ginger over low heat for a while. Add seasonings and stir fry evenly. Remove from flame. Leave to cool.
- Place fried garlic mixture on the prawns and add 7 tbsp water together.
- Steam prawns at high heat for about 5 minutes.
- Sprinkle some chopped chilli on top as garnishing and serve immediately.
Kitchen note: Use half of the garlic mixture if you don’t like the strong taste of garlic
