Watercress Soup 西洋菜汤
Ingredients:
500g or 2 bundles Watercress
500g Pork ribs ~ rinsed and scalded with boiling water
20g Dried scallops 干贝
15 Red dates 红枣
10 pips Garlic
2 litre Water
Put all ingredients in a pot and bring to boil. Then lower heat and simmer for 2 hours. Season with salt before serve.
This is one of my family favourite soups and we have it quite frequently at home.
Watercress contains significant amounts of iron, calcium and folic acid, in addition to vitamin A and C.
Hi Ann, can I add in red dates, dried octopus, and wolfberries in addition to your recipe? I wont be using pork ribs but chicken carcass and chicken feet. Thanks
Ai Li, yes of course. In fact I think dried octopus tastes better than dried scallops.

Hi Divina: Yes this is a healthy soup. You can also add honey dates if you don't have red dates.
My dad used to make this soup at home but he only used pork and just add the watercress. But it's good to add some dates and dried scallops. I happen to have some watercress here too. 😀

Watercress is well suited to hydroponic cultivation, thriving in water.
Info from Wiki: Watercress is widely believed to help defend against lung cancer and due to high iodine content, watercress has a strengthening effect on the thyroid gland.
Watercress is so versatile and is delicious when mixed into a light salad.

I cooked this last Sunday. Everyone in my family loves watercress soup.
I didn't try cooking with dried scallop before. Next time must try ur version.
Just to share, I like to cook it with pork ribs, fig and almond (南杏&北杏). Sometimes I also add some red dates.

Watercress has a very limited availability here. I would certainly like to try this as I do like the flavor of watercress. Beautiful presentation and picture.
