Basil is commonly used fresh in cooked recipes. It is generously added at the last moment as cooking quickly destroys the flavor. Here is my simple recipe that uses Thai basil leaves in this meat dish and it is delicious with a hint of spiciness and savory to go with a plate of green vegetables.

Stir Fried Pork with Basil Leave
Ingredients:
- 500g Minced pork with some fats
- 2 tbsp Garlic – chopped
- 2-3 Fresh chillies, cut
- 1 tsp Sugar
- 1 tbsp Light Soy sauce
- 1 tbsp Dark Soy sauce (Kwong Cheong Thye Brand)
- 2 tbsp Oyster sauce
- one handful of fresh Thai basil leaves
Method:
- Heat wok and add enough oil, followed by garlic and fresh chillies. Stir fry garlic and chillies until aromatic.
- Add minced pork and quickly stir fry and break the minced pork into small lumps with the frying spade.
- When the pork is cooked, add sugar, light soy sauce, dark soy sauce and oyster sauce with 2 tbsp of water. Stir well.
- Add basil leaves and do a few quick stirs until the basil leaves are wilted with their exotic fragrance.
- Ready to serve.
