Seafood Hor Fun (Flat Rice Noodle) 海鲜河粉
I love Hor Fun (Flat Rice noodle) to be cooked in soup, gravy or stir fried is because of the smooth and slippery texture of the noodle. I cooked this easy ~ Seafood Hor Fun (海鲜河粉) yesterday. Added to the Hor Fun are white fish, fish cake, prawns, squids and some cai xin (vegetable). You can add any ingredients on hand like beef, chicken, pork, bean sprouts, shiitake mushrooms and you will enjoy this one dish meal very much.

2 tsp Garlic – chopped
2 tbsp Light soy sauce
1/2 tbsp Dark soy sauce
1/2 tsp Fish sauce
1/2 tsp Sugar
a drop Sesame oil
Mix sauce seasoning in a cup
Method:
Prepare a pot of boiling water and set aside.
Add some oil in the wok, fry chopped garlic and pour in the sauce seasoning with 1/2 tbsp of cooking wine and bring to a boil.
Add fish cake, white fish, prawns, squid and cai xin into the sauce seasoning, stir well and let it boil again.
Then check the salt level, add a little salt or add water if necessary.
Lastly add in thickening (1 tbsp cornflour + 3 tbsp water), stir well and off heat.
Divide Hor Fun into 3 equal portions and blanch it into the boiling water for 30 seconds and drain well.
Place Hor fun on to serving plate and pour the thickening sauce with ingredients on top.
Serve immediately.

I'm with you. I love hor fun as well, stir fried, soups, anything. I think it's because the noodles are so soft and can be slurped down your throat .. hehe not much chewing.

I love this seafood horfun. Good thing we can get horfun here but I use more of the dried ones as the fresh ones are frozen and sometimes not fresh.
