I love tomatoes. They are not only juicy and delicious … there are also many health benefits from eating tomatoes. They contain compounds that have been proven to help prevent cancer, heart disease cataracts and many others. Cabbage lasts in the fridge for a long time and it is a good source of dietary fibre when you can’t find time to do your grocery shopping. So this time around I used tomatoes to cook with the leftover cabbage from my previous post Fried Udon. Stir fry them together in less than 10 minutes and you get a sweet and sour dish served on the dining table. Have a try, I’m sure your kids will also enjoy this healthy dish very much too.

Stir Fried Cabbage and Tomatoes

Ingredients
- ½ Beijing cabbage, about 350g
- 2 medium Tomatoes, diced
- 2 gloves Garlic, chopped
- ½ tsp Salt
- ½ tsp Sugar
- 1 tbsp Ketchup
- 2-3 tbsp Water
Instructions
- Coarsely shred the cabbage and rinse well. Drain and set aside.
- Rinse tomatoes and dice, set aside.
- Heat wok with some oil to saute the garlic. Put in the cabbage and cook until soft, add a little water if necessary. Add diced tomatoes and seasoning with 2-3 tablespoons of water into it. Stir fry to combine and serve immediately.

番茄烩椰菜 Stir Fried Cabbage and Tomatoes

材料:
- 1/2个 椰菜 (高丽菜),约350克
- 2个 番茄 ,切成丁状
- 2粒 蒜头,切碎
- 1/2茶匙 盐
- 1/2茶匙 白糖
- 1汤匙 番茄酱
- 2-3汤匙 水
做法:
- 将椰菜切粗丝后洗净,沥干水分备用。
- 番茄切成丁壮。
- 起油锅,爆香蒜头,下椰菜炒软,下番茄丁及调味料和水2-3汤匙炒匀即可享用。
