Baked Tofu Cheesecake


Tofu is one of my favourite food items and I like anything that cooked with tofu. Two months back when I saw this Baked Tofu Cheesecake from a Chinese magazine, I told myself I have to try this recipe when I'm free. I've tweaked the recipe a little and the cheesecake turned out light and moist that almost melts in your mouth.  If you're a fan of Tofu and Cheesecake, here is the simple combination recipe that you don't have to worry about unwanted calories.



Ingredients
(A)
250g Silken tofu (tube form)
250g Cream cheese
5 Egg yolks
120ml Soya milk (unsweetened)
3 tbsp Lemon juice
1 tsp Vanilla extract
70g Plain flour (sifted)

(B)
5 Egg whites
130g Caster sugar

 
 

Method:
  • Preheat oven to 170C. Line a 9" cake tin and wrap with heavy duty aluminium foil to prevent any water from sipping into the cheesecake during baking. 
  • In a food processor, blend all (A) ingredients until smooth. Put mixture in a large bowl.
  • In a separate mixing bowl, beat egg white and caster sugar until semi-firm peaks form to make soft meringue.
  • Use a whisk to mix 1/3 soft meringue with mixture.
  • Gently fold in the rest with spatula.
  • Pour mixture into cake tin and steam bake for about 50 mins at the lower rack of the oven.
  • Move the cheesecake to upper rack of the oven and switch temperature to grill for about 30 seconds to one minute to get a nice golden colour on top of the cake. 
  • Leave cheesecake to cool in room temperature, remove and best to chill before serve.

  2. I love tofu too and I am sure I will like this cheesecake but I wonder if my husband will eat it. He can't stand tofu. Maybe I will make this without telling him there is tofu in it. Let see his reactions.

    We are not very fond of the tofu. Dont mind to eat but not die-hard-fans. but would love to try this out if the tofu taste is not that significant in the cake. ;)

  38. I don't think I've ever seen a more beautiful cheesecake in my life! It helps that I like tofu : ) Now if I could just find a good substitute for the cream cheese that isn't just "fake" cream cheese I could make this for my non-dairy eating husband!

  41. I begin to shutter every time I see tofu in a recipe. I fear I have made a couple desserts (one a cheesecake) with tofu that looked absolutely fabulous but tasted...well not like anything I'd eat! Heeheehhe!!!

    I have since voided any tofu recipes. Yours does look quite tasty!

    Mel, This cheesecake is quite tall and I think you can use a 8 inches square tin but not round. Never invert cheesecake as its has more water content than chiffon cake.

    Ann, tried baking this cake using 8" round pan (cos I don't have either 9" round or 8" sq pan) my cheesecake doesn't look nice like yours. It has crack surface and sank upon cooling T_T although ugly it's still yummy good. Any idea why it sank? TIA

    Mel, Because you're using a smaller tin to make the cake higher than the usual one. Can you see the height of my cheesecake is almost the same level as the cake tin after baked? (referring the last pic in the oven)and you might need to bake for another 5 mins for a taller cake.
    Most baked cheesecakes got cracks on the cake same as this one here.
