Almond Coffee Cake

Hello everyone! Is Monday again! I am so excited when I found this easy recipe - Almond Coffee Cake in Donna Hay's magazine and they are the most delicious small cakes that I ever tasted.  Can you imagine pouring Kahlua liqueur immediately over the cakes when they just are out of the oven? They are a match made in heaven!! Out of six that I made, I ate 2 while they were still warm. Even after the next day, the small cakes are still very moist and delicious. Trust me! You'll not regret making this after trying it.

Before you move on to read the recipe on my Almond Coffee Cake, I would like to show you this Cheddar Cheese Loaf made by Chris of Yummy Bakes. Chris gave this to me when we had an afternoon tea together yesterday.  It is a very fragrant loaf and you can never stop at one with that generous topping of cheddar cheese... so yummy! I definitely want to make this for sure.  Chris, hope to see your recipe soon :)


Almond Coffee Cake

    Ingredients: (from Donna Hay's magazine Aug/Sep '09 issue)
    2 tbsp Plain flour, sifted
    1/2 cup Icing sugar ~ 55g  40g
    1/4 cup Almond meal (ground almond) ~ 30g
    2 tsp Instant coffee powder
    40g Butter, melted
    2 Egg whites ~ 80g
    1/4 cup Kahlua coffee liqueur

Look how simple it is. Just mix the ingredients together and bake it!


     Method:
  • Preheat oven to 180C (335F). Place the flour, sugar, almond meal, coffee, butter and egg whites in a bowl and mix well combine with a hand whisk.
  • Spoon mixture into 6 lightly greased or use cooking spray on medium size muffin pan or 12 mini muffin pan and bake for 20-25 minutes or until cooked when tested with a skewer.
  • Drizzle with the liqueur (about 1/2 tablespoon on each cake) and set aside for 2 minutes before turning out on a wire rack to cool. 
  • Decorate with chocolate icing on top (I used Wiltion chocolate icing) or just dust with some icing sugar.
  • You can serve them warm or store it in an airtight container for 2-3 days.

(Updated - 18/Mar) I also used a mini donut pan to bake these cakes. Best to be eaten after one day. Store them in a container at room temperature.

      Aww ... that's nice but I wouldn't want the cute crown to get all squashed. So, I guess I'll have to make these myself. I do love a small recipe. I like it when everything finishes quickly and nothing has time to go stale.

      DH's magazines are very expensive here, around S$12 but we can sometime buy those outdated ones at very cheap price - 3 for S$10... can save for monies for other books :D

      Most of my plates for photography were bought from Daiso. They always cheap and pretty :)

    1. Evy, Kahlua liqueur can be bought at most supermarket like Cold Storage and Carrefour but it is very expensive, around S$60 for 750ml. You can try Isetan, they might have miniature one. Best to buy Kahlua at Duty free shop at the airport. Or you can try adding rum into the cake.

      BTW I just went to your site but don't know why cannot read your recipe at all.

  40. This is such an "adult" cake. Ann's recommendation must be good. Would love to try this asap since I have almond meal at home (bought for macaron trial).

    1. Hi Pauline, I didn't measure the plain flour. Just level spoon the flour will do. Please take note this recipe is not suitable to use a large mould or muffin cup. It will cause the cake too dense because of little flour is used.

Hope you don't find me a nuisance :> By the way, almond meal is it almond flour? I can get it at PH? Can I use a 6-hole or 12-hole muffin tray for these cakes? This will be another hit with my husband especially. He loves everything liqueur and coffee combined. Thanks, again!

    1. Hi Ai Li, Is OK, I really don't mind :) This is a very small cakes, 6 hole muffin tray would be good enough unless you want to double the recipe. You can see I only baked 9 donut shapes out of 12.

  54. Oh my, Ann! Mine didn't turn out well....sad! I doubled the portions but still get only 6pcs. The cakes peaked and cracked at the top. I poured 1.2tbsp of liquor in each cake and it overflowed! I had to loosen the edges of the cake so that the liquor would seep through. Now my cakes are so bitter - they are like liquored cakes!! What could I have done wrong? I used a 6-hole muffin tray.       Wonder how big is your pan.
      This cake is suitable for small muffin pan. I think you have over baked that was why the top cracked.
