Hello everyone! Is Monday again! I am so excited when I found this easy recipe - Almond Coffee Cake in Donna Hay's magazine and they are the most delicious small cakes that I ever tasted. Can you imagine pouring Kahlua liqueur immediately over the cakes when they just are out of the oven? They are a match made in heaven!! Out of six that I made, I ate 2 while they were still warm. Even after the next day, the small cakes are still very moist and delicious. Trust me! You'll not regret making this after trying it. ♥
Before you move on to read the recipe on my Almond Coffee Cake, I would like to show you this Cheddar Cheese Loaf made by Chris of Yummy Bakes. Chris gave this to me when we had an afternoon tea together yesterday. It is a very fragrant loaf and you can never stop at one with that generous topping of cheddar cheese... so yummy! I definitely want to make this for sure. Chris, hope to see your recipe soon :)
Almond Coffee Cake
2 tbsp Plain flour, sifted
1/2 cup Icing sugar ~
1/4 cup Almond meal (ground almond) ~ 30g
2 tsp Instant coffee powder
40g Butter, melted
2 Egg whites ~ 80g
1/4 cup Kahlua coffee liqueur
Look how simple it is. Just mix the ingredients together and bake it!
Method:
- Preheat oven to 180C (335F). Place the flour, sugar, almond meal, coffee, butter and egg whites in a bowl and mix well combine with a hand whisk.
- Spoon mixture into 6 lightly greased or use cooking spray on medium size muffin pan or 12 mini muffin pan and bake for 20-25 minutes or until cooked when tested with a skewer.
- Drizzle with the liqueur (about 1/2 tablespoon on each cake) and set aside for 2 minutes before turning out on a wire rack to cool.
- Decorate with chocolate icing on top (I used Wiltion chocolate icing) or just dust with some icing sugar.
- You can serve them warm or store it in an airtight container for 2-3 days.
Enjoy!
(Updated - 18/Mar) I also used a mini donut pan to bake these cakes. Best to be eaten after one day. Store them in a container at room temperature.
Look cute with a little dusting of snow powder.

Dear Ann, May I know where can I purchase Kahlua coffee liqueur? Any other replacement would you recommend? Thank you. :-)
ReplyDeleteEvy, Kahlua liqueur can be bought at most supermarket like Cold Storage and Carrefour but it is very expensive, around S$60 for 750ml. You can try Isetan, they might have miniature one. Best to buy Kahlua at Duty free shop at the airport. Or you can try adding rum into the cake.
DeleteBTW I just went to your site but don't know why cannot read your recipe at all.
wow..awesome recipe

ReplyDeleteThanks Jessie. I coming over to check the link :)
DeleteAnn, this is not too complicating to make, I think I can handle this:D Whether I can make mine as pretty as yours is another story.
ReplyDeleteQuay Po, This is an easy recipe and you got good photography skills :)
DeleteAnn, what's the weight of 2 Tbs of plain flour used in your almond coffe cake. Thks. for sharing this easy recipe. Am a nivice cook and thought of trying out this recipe
ReplyDeleteHi Ann,
ReplyDeleteI'm Pauline and am a novice cook. I would like to know the weight of 2 tbsp of plain flour of your almond coffee cake. Thks for sharing this simple recipe with us.
Hi Pauline, I didn't measure the plain flour. Just level spoon the flour will do. Please take note this recipe is not suitable to use a large mould or muffin cup. It will cause the cake too dense because of little flour is used.
DeleteWhat a clever way to bake these, they look gorgeous!!
ReplyDeleteThese are both adorable and beautiful and I bet absolutely delicious. They are being featured at Bizzy Bakes. Bizzy and I thank you for sharing with us.
ReplyDeleteHi Ann, yes its me again. I am simply going through all your recipes.....following you everywhere and asking questions. Hope you don't find me a nuisance :> By the way, almond meal is it almond flour? I can get it at PH? Can I use a 6-hole or 12-hole muffin tray for these cakes? This will be another hit with my husband especially. He loves everything liqueur and coffee combined. Thanks, again!
ReplyDeleteHi Ai Li, Is OK, I really don't mind :) This is a very small cakes, 6 hole muffin tray would be good enough unless you want to double the recipe. You can see I only baked 9 donut shapes out of 12.
DeleteHi Ann,thanks for the quick response. So is almond meal = almond flour and can be bought from Phoon Huat? Thanks again!
ReplyDeleteYes, you can get at any bakery supply shops.
DeleteAnn, what is the gm weight of 2 tbsp of plain flour? This is my next "target" to bake. Thanks
ReplyDeleteAi Li, I used the measuring spoon to level the plain flour. No need to weigh at all.
DeleteThank you, Ann! Hopefully mine will turn out as gorgeous as yours! I have absolute trust in the taste!
DeleteOh my, Ann! Mine didn't turn out well....sad! I doubled the portions but still get only 6pcs. The cakes peaked and cracked at the top. I poured 1.2tbsp of liquor in each cake and it overflowed! I had to loosen the edges of the cake so that the liquor would seep through. Now my cakes are so bitter - they are like liquored cakes!! What could I have done wrong? I used a 6-hole muffin tray. Please help! Thanks, Ann!
ReplyDeleteAi Li,
DeleteWonder how big is your pan.
This cake is suitable for small muffin pan. I think you have over baked that was why the top cracked.
hey dear, this is a liqueur cake, not ordinary cake lol!
Looks easy, I want to try. Need to buy almond meal first. Tks!
ReplyDeleteAnn, I cant find almond meal at supermart. Is it ground almond?
ReplyDeleteHi Codyukie, sorry... In the west, they called almond meal. Actually is ground almond. I'll update in my recipe.
DeleteThanks Ann, I guess it must be ground almond and bought it. Now waiting for the chance to bake.
