Mooncake Festival falls on 30th September this year and it is only about 4 weeks away. As the weather has been very hot and humid in the past weeks, why not make some jelly mooncakes to beat the heat. After making the Kiwi Popsicles, I continue to use the remaining kiwifruits to make jelly mooncakes with less sugar but fully packed with gold and green kiwifruits. The jelly mooncakes turned out beautifully and very yummy too. I love the sourish of the kiwifruits in the jelly and really enjoyed this cooling dessert very much that I had two kiwifruit jellies at one go.
I'm using this pretty silicone mould that HS gave it to me as a birthday present sometime ago. Thanks HS for this lovely present :)
Kiwifruit Jelly Mooncakes
- Ingredients: makes 6
(A)
200g Water
2 1/2 tbsp Sugar
1 Pandan leaf
1 tsp Agar agar powder
3 tbsp Fresh milk
a drop of red and egg yellow colouring
(B)
380g Water
3 1/2 tbsp Sugar (may add a little more sugar for sweeter jellies)
2 Pandan leaves
1 3/4 tsp Agar agar powder
1 1/2 Green kiwifruits
1 1/2 Gold kiwifruits
5-8 Red cherries
- Boil (A) - water, sugar,agar agar powder and pandan leaf together in a pot at medium heat. Keep stirring mixture with a hand whisk until liquid boiled. Discard pandan leaf and off heat. Add 3 tbsp fresh milk, continue to stir for another one minute.
- Divide liquid into 2 portions, add two drops of cherry red and egg yellow colouring into each portion and stir well. Pour red and yellow liquid into each cavity evenly. Leave jellies mould to set in the refrigerator.
- Cut, red cherries, gold and green kiwfruits into cubes and set aside.
- Boil (B) - water, sugar, agar agar powder and pandan leaves in a pot at medium heat. Keep stirring mixture with a hand whisk until liquid boiled with a hand whisk. Discard pandan leaves and put all the kiwifruits and cherries into it, off heat. Continue to stir well with a spoon for another one minute.
- Take out jellies mould from the fridge and use a small knife gently scratch the set jellies before adding the kiwifruits mixture on it. This method is to make the agar agar jelly sticks together.
- Scoop kiwifruits mixture into each cavity evenly and leave to set in refrigerator for at least 2 hours or more.

DeleteHi Ann, Jus check with you, do you know which type or brand of coloring is best to use to make agar/jelly. Cuz i used redman brand, 1st day the color very vibrant & nice but the next day it will fade and slowly the 2nd layer wiil be affected....hence not so nice already. Can you advise ? Thanks Kym

DeleteI think is not fully the color problem. Is the agar agar. If your agar agar is too soft, it will definitely softened after you removed from the mould. You must boil the liquid and keep stirring it to get a firm agar/jelly. Remember not to add too much coloring in the agar agar liquid.
Thanks Ann for your reply. Another concern i have is about the fresh milk. After added the fresh milk into the plain agar over very small fire..after awhile it tends to form white thin film and i have to strain it away. How do i avoid this. Thanks again ...KYM
DeleteKYM, In my recipe stated 'off heat' and add milk because the milk will curdles when the heat is still on.
Deletehello, Your jelly is soooooo beautiful, i tried to do them but i dont know how to take them out from the mold, mine is silicone, I tried to freez them, put them to hot water, even heaten up with blowdryer, nothing works, hot to take them out withoit breaking them???
ReplyDeleteHi, you don't have to freeze the mold. After the jelly is set for few hours, pull the sides of the silicone mold a little and then push the section of the mould from beneath. Popping the jelly out of the mold and carefully flip it over and place on a serving plate.

DeleteI tried to do this, but it didn't want to come out,it'sticks to the bottom of the mold,and when I tried to pop it it rip/split/tear in half.
maybe my jelly is not that thick, or maybe i should grease my mold first, or maybe my hands are just not that skillful as Yours.
Mayby You could do a little film how to do that, next time You'll make some jelly from silicone mold. Pretty please :-)
