Kiwifruit Jelly Mooncakes 奇异果菜燕月饼
Mooncake Festival falls on 30th September this year and it is only about 4 weeks away. As the weather has been very hot and humid in the past weeks, why not make some jelly mooncakes to beat the heat. After making the Kiwi Popsicles, I continue to use the remaining kiwifruits to make jelly mooncakes with less sugar but fully packed with gold and green kiwifruits. The jelly mooncakes turned out beautifully and very yummy too. I love the sourish of the kiwifruits in the jelly and really enjoyed this cooling dessert very much that I had two kiwifruit jellies at one go.

Kiwifruit Jelly Mooncakes

Ingredients
Instructions
- Boil (A) - water, sugar,agar agar powder and pandan leaf together in a pot at medium heat. Keep stirring mixture with a hand whisk until liquid boiled. Discard pandan leaf and off heat. Add 3 tbsp fresh milk, continue to stir for another one minute.
- Divide liquid into 2 portions, add two drops of cherry red and egg yellow colouring into each portion and stir well. Pour red and yellow liquid into each cavity evenly. Leave jellies mould to set in the refrigerator.
- Cut, red cherries, gold and green kiwfruits into cubes and set aside.
- Boil (B) - water, sugar, agar agar powder and pandan leaves in a pot at medium heat. Keep stirring mixture with a hand whisk until liquid boiled. Discard pandan leaves and put all the kiwifruits and cherries into it, off heat. Continue to stir well with a spoon for another one minute.
- Take out jellies mould from the fridge and use a small knife gently scratch the set jellies before adding the kiwifruits mixture on it. This method is to make the agar agar jelly sticks together.
- Scoop kiwifruits mixture into each cavity evenly and leave to set in refrigerator for at least 2 hours or more.
奇异果菜燕月饼
材料(A):
- 200克 清水
- 2.5汤匙 白糖
- 1叶 香兰叶
- 1茶匙 菜燕粉
- 3汤匙 牛奶
- 红和蛋黄色素,适量
材料(B):
- 380克 清水
- 3.5汤匙 白糖 (喜欢更甜的话,可多加点糖)
- 2叶 香兰叶
- 1 + 3/4茶匙 菜燕粉
- 1粒半 青奇异果
- 1粒半 黄奇异果
- 5-8粒 糖渍樱桃
做法:
- 材料(A) – 水,糖,菜燕粉和香兰叶以中火不停的搅拌至煮滚。熄火,拿掉香兰叶。加入3汤匙牛奶水,继续搅拌一分钟。
- 煮好的菜燕水分成两份。滴几滴红色素和黄色素,搅匀。分别倒入6个模子里(请看图片)。放进冰箱冷藏至凝固。
- 糖渍樱桃,青/黄奇异果切丁,备用。
- 材料(B) – 水,糖,菜燕粉和香兰叶以中火搅拌至煮滚。拿掉香兰叶,熄火。倒入切好的糖渍樱桃,青/黄奇异果。用汤匙继续搅拌一分钟。
- 冷冻好的菜燕从冰箱拿出,用刀子轻刮凝固了菜燕面上(请看图片),这样两者才能互相粘在一起。
- 倒入煮好的水果菜燕液至掩盖整个模子。收入冰箱冷藏至凝固约2小时即可享用。

Thank you Elaine. Tor the colouring, I used rose pink and egg yellow. You can use any colour you like.

the agar agar powder, can i use the pack like Nano Agar Agar powder ( no coloring ?) is it the same.
Hi Jen Tey,You can use any jelly powder long as it can set easily but please don't use gelatine. As gelatine is too soft.
