Dried Cherry Tomato and Yuzu Cake

I love munching dried cherry tomatoes as they are sweet and a little sourish to my liking. Something popped into my mind while I was munching half way ~~ why not add this little tomatoes into my bakes? So I quickly flipped through some of my cookbooks and I saw this recipe from a Chinese cookbook 经典100 using yuzu paste and orange cointreau as the main ingredients ~~ mmmm... this must be good to go with my dried cherry tomatoes! Without second thoughts, I baked this Dried Cherry Tomato and Yuzu Cake yesterday with slight modification. I'm very pleased with the result, the cake was soft and the combination of flavours, perfect, love it to bits. Definitely a keeper cake that can be baked as a gift for Chinese New Year.   




Dried Cherry Tomato and Yuzu Cake


    Ingredients: 
     (A) 20g Orange Cointreau
           20g Yuzu paste
           30g Cold water

     (B) 120g Butter
           40g Sugar
           3 Egg yolks, beaten (70g eggs each)
           20g Orange cointreau
           1/2 tsp Vanilla extract
           2 tbsp Plain yoghurt

     (C) 3 Egg whites
           50g Sugar

     (D) 150g Plain flour
            1/2 tsp Baking powder (sieve together in a bowl)

     (E) 35g Dried cherry tomatoes (available   at PH)
           sliced or cut to small pieces



     Method:
  • Grease a 20cm bundt pan with butter or cooking spray, set aside.
  • Mix (A) - orange cointreau, yuzu paste and cold water together and set aside.
  • Beat butter and sugar till white and creamy at medium speed.
  • Lower speed and gradually add egg yolks into it until mixture incorporated. Then add in yuzu mixture, orange cointreau and vanilla extract and 2 tbsp plain yoghurt, mix well.
  • In another clean mixing bowl, whisk egg whites and sugar together till soft peak form.
  • Add 1/3 of egg whites into the egg yolk mixture follow by the flour in 2-3 batches to the egg yolk mixture and fold well with a rubber spatula then fold in the remaining egg white. 
  • Sprinkle some plain flour on to the dried cherry tomatoes and add into the batter, mix well.
  • Pour batter into prepared bundt pan and bake at preheated oven 180 degrees C for 25-30 minutes or skewer inserted into the center of the cake comes out clean.
  • Leave cake in the bundt pan for 5 minutes after baked and remove to wire rack to cool down completely.   
     Kitchen notes:
     You may like to increase the recipe using 4 eggs to make the cake looks taller.
     Can use orange juice and zest if you don't have orange cointreau at home.

  1. Once a friend of mine gave me some dried cherry tomatoes and I love it (her hubby bought it in Shanghai). But I bought once in Singapore tasted awefully sweet.

    Do let me know where I get get some that is not so terribly sweet.

  3. Oh, this is the first time I came across having "tomatoes" for the bake of a cake! If only I could get hold of dried cherry tomato here. Your cake look so beautifully done. I love it. PH really has everything under one roof for the bakers, right?

  24. Oh, I want to eat this cake, Ann! I saw a pan today with like 8-10 mini bundt cake pan inside ans it is selling like $35, quickly put it back to the shelf. I really like the bundt cake shape and I think I should be able to handle well with the mini size, haha! This will certainly be everyone's favourite cake if it is served to family & friends! Like how you decorate the cake with some dried tomatoes!

  25. What an interesting combination. I never would have thought of dried cherry tomatoes in a cake, but now I'm intrigued. I guess since they're a fruit anyway that it makes sense. And we put zucchini in cake. Why not? Gorgeous addition to #BundtaMonth!

  26. I've never had dried cherry tomatoes before! They sound like they must have been such a nice complement to the citrus in this cake though. Now I need to go find some and make this cake. It looks gorgeous and I'm so intrigued by the flavor combinations. Lovely!

  38. This cake sounds like a winner wiht the yuzu and orange cointreau. I have never tried dried cherry tomatoes but they sure make a pretty garnish for your cake. :)

  39. Wow! this is an amazing bundt cake! I love the combinations & always wanted to try & bake a cake or pie with yuzu. But I can't seem to get hold of this yuzu juice or even paste. Will love to try this recipe of yours . Very interesting & intriguing!

    i would like to try this cake..just that i don't have dried cherry tomatoes and 20 cm bundt pan... shouldn't be a problem if i replace w dried cranberry, right? but i am not sure what pan size to use to replace the 20cm bundt pan...appreciate your advice pls...

    1. Hi Octopusmum, Sure you can used dried cranberry - with rum would be nice. You can use a normal cake pan to bake this cake
