Chocolate Lime Cheesecake 巧克力青柠芝蛋糕


I've have been posting many recipes using lemon and lime lately. Love the refreshing tangy flavour either in bakes, dessert or salad. It is also very healthy with loads of Vitamin C.  This popular Chocolate Lime Cheesecake was adapted from Nigella Lawson and is very easy to make. I love cheesecake and nothing can stop me to bake this yummy smooth, melt-in-your mouth cheesecake and once chilled, I'm going to pamper myself with a big slice of it. If you love cheesecake, this is for you :) Simply irresistible!

Chocolate Lime Cheesecake

     120g Chocolate biscuits
     50g Butter, melted
     375g Cream cheese, room temperature
     85g Caster sugar
     2 Large eggs (70g each)
     1 large egg yolk
     1 tbsp Lime juice (or to your taste)

  • Preheat oven 170C. Grease the sides of a 7 inch normal cake pan and line the bottom of the cake pan or wrap a springform pan with two layers of aluminium foil.
  • Crush biscuits with a rolling pin in a zip lock bag until they are like crumbs, then add the butter and mix well. Pressing the biscuit crumbs with your hand at the bottom of the lined cake pan. Put the tin in the fridge to set.
  • Beat the cream cheese until it's smooth at medium speed, and then add the sugar. Beat in the eggs, egg yolk one at a time, then finally the lime juice.
  • Pour the cream cheese filling onto the chilled biscuit base, place the tin in a roasting tray and pour hot water about halfway up the sides of the cake pan and bake for about 45 minutes. It should feel set, but not rigidly so.
  • Leave cake to cool on a wire rack, then remove the cake pan and place it in the fridge. Chill cheesecake for about two hour or more before serving.


    120g 巧克力饼干
    50个 牛油,融化
    375克 奶油奶酪 (温室中待软化)
     85克 白砂糖
     2个 全蛋 (约70克一个)
     1个 蛋黄
     1汤匙 青柠檬汁或适量
  • 烤箱预热至170度。准备1个7寸圆形烤盘,旁边抹油,底部铺上油纸。(如果是活动底模需在蛋糕盘外面包一层锡纸)
  • 先将巧克力饼干放入保鲜袋中,再用擀面棍压碎饼干,然后一个碗里用手把饼干碎与融化奶油抓匀,压入烤盘底部,压平压紧。铺好饼干后,把蛋糕模放进冰箱备用。
  • 在电动搅拌器用中述度把奶油奶酪打致滑加入糖搅致匀。然后用底述度先将第一个鸡蛋和奶酪糊搅拌均匀后,再加另一个,然后才把青柠檬汁加入,完全搅匀即可。
  • 最后倒入准备好的蛋糕饼底上。用水谷去方式烘烤45分钟 (如果是活动底模需在蛋糕盘外面包一层锡纸)。用水谷去方式(加入热水)烘烤约45分钟或刚刚变硬即可。
  • 烤好的芝蛋糕取出以后,连同蛋糕模一起待凉脱模,把蛋糕送入冰箱冷藏两个小时即可享用。

  19. Ann, if I have the time, I would like to try this out this weekend. Do I bake this cake 1 level below the middle rack or right at the bottom of the oven? Do I have to leave the oven door ajar and leave the cake to cool down in the oven after it is baked or do I immediately take out of the oven when baked and leave it to cool on a wire rack? Thanks for your help!

    1. Ai Li, Yes bake the cake below the middle rack. I didn't mention in my recipe to leave the door open. After baked take out the cake straight away. Add a little more of lime juice if you prefer. You may need to bake the cake a few minutes longer If you find the cheesecake is still a little wet, As temp oven varies, you've to monitor your cake well.
      You can bake a 8 inch cake pan with double recipes (3 blocks of cheese cream) and it takes a little longer time to bake. Please go to the link above and check on Nigella Lawson's recipe.

Speaking of cheesecake, I baked an orange cheesecake over the long Easter weekend, hoping to support this month's LTU but I didn't have time to take photo on the next day as I had a group of friends coming over for gathering. So yesterday I made something with orange rind hope to support the LTU before the end of this month.

    I'm happy that everyone has been cooking and baking well with lots of vitamin C! I was sick in Singapore on my last 2 days of my trip... Maybe not enough vitamin C??? ha ha!
