I love apples in bakes. This is another easy recipe green apples diced with cream cheese (adapted from the Yum Yum magazine 新新饮食). These small cakes are not light but they taste so wonderful with a little sweetness of the soft diced apples together with a sprinkling of the top desiccated coconut. If I were to bake this again, I would like to add the diced apples into the batter instead of cooking them to give more crunch to the cakes. I’m sure it’ll taste awesome too 🙂

Apple Cheese Cupcakes 苹果艺士小蛋糕

Ingredients
- Ingredients: (A)
- ½ tbsp Butter
- 3 Green apples, peeled and diced
- ½ tsp Cinnamon powder
- 55g Sugar
Ingredients (B): - 100g Butter
- 80g Caster sugar
- 3 Eggs, 70g each
- 125g Cream cheese
- ½ tsp Vanilla extract
- Grated of 1 lemon zest
- 1 tbsp Lemon juice
- 120g Plain flour
- ½ tsp Baking powder
- 50g Ground almond
- Desiccated coconut
Instructions
- Melt butter in a saucepan. Add in the remaining ingredients A and stir fry over low heat until apple cubes soft. Dish up and set aside.
- Cream butter and caster sugar until fluffy. Add in eggs one at a time and beating well after each addition.
- Add cream cheese and continue to beat until the mixture is smooth.
- Add in the remaining ingredients B and the apple mixture and stir well with a hand whisk.
- Scoop the batter into paper cups and sprinkle disiccated coconut on top.
- Bake in the preheated oven at 200C for 15 minutes. Remove and leave to cool before serving.

- 材料:(A)
- 1/2 大茶匙 牛油
- 3 粒 苹果,去皮,切丁
- 1/2 茶匙 肉桂粉
- 55克 幼糖
- 才料:(B)
- 100克 牛油
- 80克 幼糖
- 3 粒 鸡蛋,约70克
- 125克 奶油芝士
- 1粒 柠檬皮碎
- 1 大茶匙 柠檬汁
- 120克 中筋面粉
- 1/2 茶匙 发粉
50克 杏仁粉 - 少许干椰丝
做法:(约12个小蛋糕)
- 加热溶牛油,放入其余材料A小火炒至平果软,盛起备用。
- 牛油加入幼糖拌打致松软,逐粒加入鸡蛋拌打致松软。
- 加入奶油芝士继续拌打至光滑。
- 加入其余材料B和炒好的平果,刮刀拌匀。
- 将面糊倒入纸杯中,撒上干椰丝。
- 送入预热烤箱,以200度烤15分钟,即可取出待冷享用。
