Apple Cinnamon Cake
This is an easy recipe, Apple Cinnamon cake with walnuts crumble topping. This cake is not only moist and soft, but the sweet smell of cinnamon lingered on in the house during the process of baking. I remember I baked 5 of this Apple Cinnamon Cake for the School Fun Fair and one of my dear blogger friends also loved this cake very much.
Crumble Topping:
- 30g Plain flour
- 20g Sugar
- 1/4 tsp Cinnamon powder
- 80g Walnuts ~ chop to pieces
- 10g Soft butter
- Mix all topping ingredients together with your fingertips and put aside for later use.
Cake Ingredients
- 220g Plain flour
- 1 tsp Baking powder
- 1 tsp Baking soda
- 1 tsp Cinnamon powder
- 1/4 tsp Salt
- 150g Butter
- 150g Sugar
- 2 Large Eggs
- 1 tsp Vanilla flavor
- 40g Whipping cream
- 2 Green apples ~ peeled and diced (not too small)
Methods:
- Sift all the dry ingredients together.
- In mixing bowl, cream butter and sugar till light and fluffy then add in whipping cream, continue to beat till light.
- Then add in vanilla flavor and eggs one at a time.
- Scrape bowl and add the flour ingredients, mix well.
- Add in all chopped green apples and use a rubber spatula to fold well and pour into a 8″round lined cake tin.
- Lastly sprinkle the Crumble Topping on top of the apple mixture evenly.
- Bake in preheated oven 180C and bake at about 50 mins.

should the crumble topping be like breadcrumbs after they have been mixed?
do I cream the butter and sugar with an electric handheld mixer? If yes, how long?
how long must I beat the mixture with an electric handheld mixer after the addition of whipped cream?
do I continue to beat the mixture with an electric handheld mixer after adding the vanilla extract?
do I continue to beat the mixture with an electric handheld mixer after each addition of egg? If yes, how long must I beat after each addition of egg?
am I supposed to mix flour into the batter with a spatula or using the electric handheld mixer? If using an electric handheld mixer, is it on low speed?
I don't have an 8" round baking tin can I use a 8" square instead? Any change in baking time?

Hi Ai Li,hehee… you got a long list of questions ^_^I already stated soft butter for the crumble.Not to worry about the crumble, just mix them with your finger tip and it's not very fine like breadcrumb because of the chopped walnuts.Sorry I never use a electric handheld mixer before. I always used kenwood mixer or kitchen aid to beat the butter and sugar and I never check my beating time. As long the mixture looks pale white and light, I'll add in the next ingredient. Only take a minute to combine the whipping cream together. Yes, add in the vanilla extract and continue to add in the egg one at a time at low speed. When you see the egg is mixed well in the batter, then continue to add in the next one.Just slowly pour the flour into the batter and continue to mix at low speed until combined.If you're using a 8' square tin, the cake will be lower. For timing you can test it with a skewer after 40 minutes of baking.Hope I have answered all your questions 🙂

can this be done with regular red apples?
yes but using green apples are more crunchy.

I love crumb topping! Next time I will have to try adding some nuts into it. Apples will be coming into season very soon and this recipe will be a perfect one to try. I can almost smell the wonderful scent coming from the kitchen.
