Mini Banana Cake 迷你香蕉蛋糕
This is a healthy Mini Banana Cake as it is sugarless but turns soft and spongy after baking. It’s naturally sweetened with fruit and perfect for those who are not a sweet tooth person. The mixing of the ingredients is simply hassle free. Just whisk the wet ingredients at high speed till thick for about 4 minutes, then change to low speed and mix in the cake flour and corn oil until combined for another minute or two. Baking time is only about 20 minutes. The cake will flatten a little after baking because of no sugar added.

Mini Banana Cake
Ingredients
- 200 g mashed banana
- 4 eggs
- 1 tsp vanilla extract
- 100 g cake flour or plain flour
- 35 g corn oil;
Instructions
- Grease muffin cups with butter or use cupcake liners without greasing, set aside for later use.
- Place mashed banana, eggs and vanilla extract in a mixing bowl, whisking at high speed for about 4 minutes till thick and fluffy.
- Turn machine to low speed and slowly mix in flour and followed by corn oil, till batter combined, about a minute or two. Then gently and quickly fold well the batter with a rubber spatula to making sure the oil is well mixed.
- Pour batter into muffin cups till almost full and sprinkle white sesame seeds on top. Bake in preheated oven at 170 degrees C for about 20 minutes. (the cake will flatten a little after baked because of no sugar added)

- 营养香甜松软的小蛋糕, 用香蕉本身的甜味代替了白砂糖, 健康又不失口感.
- 材料:
- 200克 香蕉泥 (熟透)
- 4个 鸡蛋
- 1茶匙 香草香精
- 100克 底筋或中筋面粉 (过筛)
- 35克 玉米油
- 做法:
- 玛芬杯抹上牛油或用纸杯也可以,就不用抹油, 备用.
- 将香蕉泥, 鸡蛋和香蕉放入大碗中, 高速搅打发至蓬松, 约4分钟.
- 改换低速, 慢慢加入面粉和玉米油, 搅拌均匀. 然后用刮刀轻轻及快速再次把面糊搅拌均匀, 这样油就不容易沉底.
- 将面糊倒入玛芬杯至9分满, 表面撒上白芝麻. 送入预热烤箱摄氏170度烤约20分钟即可. (因为没加糖的关系,小蛋糕烘烤后会稍微塌陷).
- 烤箱温度和烘烤时间务必根据自家烤箱来定
