Pancakes without Baking Powder
I tried these quick and easy Pancakes without Baking Powder yesterday. This recipe was adapted from Angel of Cook.Bake.Love posted on her blog last week, thanks for sharing ๐ ย The pancakes are light but not fluffy as expected because no baking powder is used and I definitely prefer this healthy version. Pancakes are great for morning breakfast and delicious with butter and maple syrup. Your kids will also love adding fresh fruits, blueberry filling or chocolate sauce and a dollop of vanilla ice cream over the pancakes.ย To avoid the sweetness of adding maple syrup or ice cream, I only added fresh fruits and blueberry filling, tastes good too. Hope you’ll like this healthy recipe too.

Serves: makes 8
Ingredients
- 2 eggs, at room temperature
- 2 tbsp sugar
- ยผ tsp salt
- 120ml (ยฝ cup) milk
- ยผ tsp vanilla extract
- 120g cake flour
- 2 tbsp vegetable oil/ melted butter
Instructions
- Beat egg, sugar and salt till ribbon stage (triple in volume). You can also place the mixing bowl on top of a bowl of warm water while beating.
- Fold in sifted flour alternate with milk/vanilla extract. Lastly, add oil and mix well.
- Preheat non-stick pan Grease pan with vegetable oil. Scoop one small ladle of batter on pan, let batter spread by itself. Cook till brown on one side, flip and continue to cook, about 2-3 minutes on each side.

I made about twenty batches of this stuff, resulting in forty pancakes, and each and every one of my friends said “These are the best pancakes I have had.” So…I just want to thank you for putting this great recipe online. And one comment, if you put twice as much sugar as it says it make to pancake a bit better.
Hi Koryn, I’m so happy to hear that you and your friends enjoyed this pancake ๐ Yes, totally agree with you by adding more sugar to make the pancake tastes better but most Asians normally used less sugar in most bakes. So is really up to you to adjust the sugar level.
Hi Ann, I never make pancakes for my children b4(what kind of mother I am?) but last week, I've also eyed on a pancake, it is called the Buttermilk Pancake which I would like to try in the future. At the moment, I will just enjoy your pancakes!

Ann, these pancakes look perfect for me. I don't like the fluffy kind with and won't use syrup. So like I said these with fruit is they way I would eat them…with ice cream would be good! ๐

This pancake remind me of the fritters that my mom use to fry for us when I was a kid. My mom don't Know what is baking powder and no oven , She just use very simple and cheap ingredients but we were enjoyed so much with a cup of kopi O.

I use 2 packages of instant oatmeal, brown sugar splender, 2 whole eggs drop of coconut oil, vanilla. .and cook. .wonderful. .heathly…no toppings ď
