Stir Fried Egg with Bitter Gourd and Pork
Bitter gourd is a very nutritious vegetable and it is an excellent source of vitamins and has high dietary fiber but because of its bitter taste, many people mostly children do not like the taste of bitter gourd. Here is another easy recipe that I love to cook often at home ~ Stir Fried Egg with Bitter Gourd and Pork
Here is the recipe
2 Eggs – beaten with a pinch of salt and pepper
150g Ground pork
1/2 Bitter gourd
1 tsp Salt
Marinade for pork
1 tbsp Light soy sauce
1 tbsp Dark soy sauce
a little sesame oil
a dash of white pepper
Method:
Rinse bitter gourd. Seed and cut in slices. Rub bitter gourd with salt lightly to reduce the bitter taste.
Marinate for 5 minutes. Rinse and drain.
Add Marinade to pork and mix well. Set aside.
In a pan heat some oil and fry bitter gourd till cooked, dish up.
Add little oil to the same pan, stir fry ground pork until cooked, pour in the cooked bitter gourd, stir fry briefly.
Pour in the beaten egg to the pork mixture and stir fry until egg is set.
Dish up and serve immediately.
Enjoy!
My favorite. I made soup with bitter melon yesterday! 😀 yum yum! Usually if I fry bitter melon, it will be with eggs too!
Looks delicious! I'm pretty sure this is called Goya in Japan and Okinawan eat this vegetables with eggs. I've never been to Okinawa or had this meal called Goya Champuru, but I heard it's very good! I love your stir fried with a bowl of rice. Looks so delicious!

That's a delicious looking plate of bitter gourd. This would be lovely with a bowl of plain porridge. My hubby and son loves bitter gourd, but not my daughter. She's a bit choosy when it comes to bitter gourd and will only eat them when I fry them with eggs!

Indeed bitter gourd is a very good vegetable! It lowers blood cholesterol too! I'm looking forward to the day my kids will take this vegetable. 😛 Can't blame them, I used to be like that too, lol! Thanks for the recipe Ann!
I'm not a big fan of bitter-gourd. But with eggs, they are always very refreshing! Love this traditional dish.
I have yet to try bitter gourd. I have seen them in the Oriental Market and haven't brought one home yet. I was unsure on how to prepare it, maybe this way is good for me.

Normally I cook bitter gourd with prawns and egg. This is another way of preparing it. :)I love bitter gourd.

Anncoo, so coincidence, actually today i going to cook this dish as well, just take out half bitterguard from fridge after I use another half to cook soup with pork slices yesterday. But I will add prawn instead of pork.Hmm YUM YUM!

Bitter gourd is my favourite veggie and I always loves to get a big 1 and use it in soup and stir-fry the balance with egg 😛
I still can't accept bitter gourd although I know how healthy is it, haha. Maybe when I'm getting older, I will start to appreciate it 🙂

I hate bitter gourd in my young age, but now I begin to love it, especially this dish.
Oh no…..now I'm really missing this one…just what I love!! Drooling…drooling….drooling! That's also how I like it cooked. My mother-in-law would add a little sugar to make it easier for kids to eat. It actually tastes very delicious, too.

Hubby cannot stand bitter gourd. I don't blame him, it does get some getting used to. Your dish look delicious. Love the addition of the egg.

I just made some bittergourd yesterday. Bittergourd is never my childhood favourite but now I am loving it. Yet still sometime it tastes extra bitter due to less rain. Hope you're having a great day ahead.Kristy
