Water Chestnut Sweet Soup 马蹄(荸荠)羹

 

This water chestnut sweet soup is a very comforting Chinese dessert and can be ready within 30 minutes or even less.  It can be served hot or cold especially in our hot humid weather. The natural sweetness and the crunch of the fresh water chestnut and egg drop with goji berries is a perfect combo for this healthy and nutritious dessert.  Moreover, it is also very economical to make this yummy sweet soup at home as an after meal dessert.

Ingredients
 

  • 12 fresh water chestnut - peeled and crushed to small pieces
  • 1200 ml water
  • 100 g rock sugar or to taste
  • 3 pandan leaves - knotted
  • 1 tbsp goji berries
  • 2 tbsp fresh water chestnut flour + 2 tbsp water to mix as thickening
  • 1 egg white - lightly beaten (or use whole egg)

Instructions
 

  • In a pot, boil water, rock sugar and pandan leaves till sugar dissolved.
  • Add in the chopped water chestnuts and goji berries, simmer at medium heat for 5 minutes.
  • Mix in the water chestnut flour liquid and keep stirring to boil.
  • Lastly drizzle in the beaten egg white and keep stirring with a fork and off heat.
  • Can be served hot or chilled.

马蹄(荸荠)

材料:

做法:

  1. 将水,冰糖和香兰叶煮滚至冰糖融化。
  2. 加热马蹄碎及枸杞,用中火焖煮5分钟。
  3. 打芡(要不停的搅拌)搅匀至滚。
  4. 最后慢慢倒入蛋白,用叉搅撒成蛋花。
  5. 马蹄羹可趁热或放入冰箱冷藏后才享用。
