I first saw this beautiful chocolate cupcakes at Quinn's Baking Diary (Thank you Quinn). Tried this easy recipe two days ago and it was all gone on the next day! I called this "A Must Try Chocolate Cupcakes" is because the cupcakes texture were perfect, really light and not too sweet.

Ingredients: Makes 18 cupcakes
100g Butter, softened
200g Sugar
2 Eggs
3/4 tsp Vanilla extract
1/2 cup milk (125ml)
1 tsp Baking soda
1/2 cup Boiling water (with 1 tsp Nescafe Classic Instant Coffee powder)
190g Flour
1/4 tsp Salt
3 tsp Baking powder
40g Cocoa powder
Method:
- Sift flour, salt, baking powder and cocoa powder in bowl. Dissolve baking soda in milk.
- Cream butter and sugar until light. Add essence and eggs, continue beating.
- Add in the rest of the ingredients (milk, coffee liquid and flour ingredients), beat till smooth.
- Spoon batter into greased paper cases to 3/4 full.
- Bake in a preheated oven at 160C for about 20 mins or until skewer inserted into the center of the cake comes out clean.
- Leave to cool on rack before icing.
- Ice with whatever type of icing you prefer or dust lightly with icing sugar.
- I think the best time to consume the cupcakes are to chill first.

I bake the cake in a big pan. Its very dry. any idea where goes wrong. I'm followed the quantity as stated. baked at 170c at abt 40min. i'm considered a beginner in baking cakes. I try to bake cupcake before, it turns out very dry too. Just wondering where goes wrong. thanks. fr AW
ReplyDeleteWhen making cupcakes or muffins, you don't have to over mix the flour mixture. Just a quick stir will do by machine, hand whisk or wooden spoon. Then you'll get a light and moist cupcakes. I've not baked this into a cake tin before and I think you can still bake at 160C and use a skewer to check whether the cake it is cooked after 30 mins.
