Cheesy Cookies
Ingredients:
300g Soft butter
60g Crisco
200g Cheddar cheese – grated
1/2 tsp Salt
160g Icing sugar
600g Plain flour
1 tsp Baking powder
Method:
- Sift flour and baking powder together.
- Beat soft butter, crisco, salt and grated cheddar cheese until light and white.
- Then add icing sugar and mix well and slowly add flour, mix mixtures to a soft dough.
- Divide dough into 3 portions, roll one dough at a time between 2 plastic sheets to a thickness about 3mm.
- Cut out the dough by using cookie cutter and use a small palette knife to lift up the cut-out soft dough and place on a baking tray lined with baking sheet.
- Lightly brush the dough with egg wash. (1 egg with 2 tsp water and 1-2 drop of egg yellow colouring)
- Sprinkle extra grated cheddar cheese on top if you prefer.
- Bake in preheated oven at 170C for about 15-18 mins or until golden brown.
- Leave cookies to cool on wire rack and store in airtight container.
Crisco shortening has 50% less saturated fat than butter and zero gram transfat per serving. It is great for baking – giving you higher-textured baked goods.
Is it OK if I don’t add any sugar? I’m making it for someone who has diabetes. Thanks!
Sure you can but the texture will be different without sugar. Is there any diabetes sugar you can use?
Can I check for the cheese, can I use those slice cheese( for bread) and cut it into stripes?
Hi Meng Geok, The sliced cheese is not as cheesy as cheddar cheese and also not fragrant.

I used SCS butter. You can use salted or unsalted for this recipe because.

Crisco or any form of shortening is not conveniently obtainable from our NTUC supermarkets. I guess is for health reason, government bans it from being sold in supermarkets. However, I can buy it from Phoon Huat, Thye Kwong Chong, Gim Hin Lee.

U mentioned that "Crisco shortening has 50% less saturated fat than butter and zero gram transfat per serving". So, can I clarify with you that is it healthier to use Crisco than butter? There are many recipes which use shortening, eg. flaky egg tart, curry puff pastry but the mere word 'shortening' always frightens me.
After reading ur statement above, seems like Crisco shortening is not that unhealthy. But then again, if shortening is better than butter (if I interpreted correctly) why I cud not find any esp. Crisco brand at supermarkets (I think Government bans such product to safeguard consumers from using unhealthy products.
Wud appreciate ur clarification.

I just pasted the picture and copied the crisco shortening content from the container because a reader had asked me what is crisco shortening.
I hope very much you understand that I am no expert in the detailed product. I am also not very sure whether crisco shortening is still available now at the supermarkets or ingredient shops like Phoon Huat or Sunlik.

Anncoo, you cannot send any food product to Australia. Maybe you can but it is VERY VERY VERY STRICT! Don't bother because they don't come by cheap. Rather than it being confiscated, use it to churn more goods for me to drool okay?
