Oreo Mini Cheesecake


When I saw my good friend Rachel made this Oreo Mini Cheesecake few weeks ago, I told myself I definitely want to make this too. As I'm not a great fan of the taste of the condensed milk, I used whipping cream instead. The recipe is quite easy to follow and only takes about 20 minutes of baking time. The end result was perfect! The mini cheesecake was not too sweet to my liking and the cake texture was so light it just melted in my mouth. Definitely a keeper for sure!



Oreo Mini Cheesecake
    Ingredients: makes 12 (original recipe source from Wendy)
    250g Cream cheese
    150g Whipping cream
    1 tsp Vanilla extract
    2 Eggs (70g each), separated
    a pinch of cream of tartar
    60g Sugar
    1 tube of Oreo (137g)



     Method:
  • Separate Oreos, leaving 12 pcs without cream intact and round. Put the rest of the biscuits together with the filling into a food processor and pulse in fine.
  • Remember to preheat your oven (150C) and boil water after this.
  • Line big muffin tin (100ml capacity each) with 12 paper cups. Place 1 heaped teaspoon of oreo crumbs onto paper cups and  lightly press the crumbs to flatten with a mini roller pin. (see pictures)
  • Cream cream cheese  and 30g sugar on low speed until smooth, put in whipping cream, vanilla extract and egg yolks and continue to beat on low speed for another minute until well combined. Transfer cream mixtures to a large bowl and set aside.
  • Whisk egg whites until frothy, add in cream of tartar continue to beat until soft peaks. Add in 30g sugar and beat till stiff (as long as egg whites don't fall when overturned, it will be fine, no need to be pointy stiff). 
  • Fold in egg whites to cream cheese mixtures with a rubber spatula.
  • Spoon cream cheese mixtures into prepared paper cups. Top with an oreo biscuit.
  • Bake for 20 minutes in a water bath.
  • Leave to cool in oven, door ajar. Cool completely before chilling.
  • Best chilled for 3 hours or more before serving.
kitchen note:
You'll find this cake very moist and damp after baked. You need to chill the cake first before consume.
You can replace 100g natural yogurt and 50g fresh milk to replace whipping cream to get a firmer cake.

  11. My kids would love it, especially with that huge oreo on top. Yes, I also prefer cheese cake with whipping cream rather than condensed milk. I think condensed milk would be too sweet.

    1. Hi, can you see I place the paper cup on a tart mould? You can also put the paper cup in the muffin tin of 12. Then after filling in the cream cheese mixture place the muffin tin on a pan and pour in hot water.

  35. Hello! I've tried twice but these 2 attempts failed! =(

    They taste fine but the cake sinks down and looked really ugly.

    I suddenly realized i did not have it baked in water bath. Could it be the case? Or is it because i've over-whisked the egg whites? Sigh...

    (am quite bad at baking huh?)

    Btw, can i use Full Cream milk instead of Whipping Cream?

    1. Hi Ann Chen, Sorry to hear that :( I think probably is the egg whites mixing. You should not over mix the egg yolks and egg whites as the volume will deflates and will not rise well. Another reason might be the cake is still under baked.
      I think full cream milk is heavier and not as thick as whipping cream. I personally prefer to use whipping in most of my cheesecakes as it tastes better tbut I don't mind to try it sometime.

  37. Hi Ann, finally finished a milestone of my work & quickly tried this yummy recipe last night.
    But i failed... :(((
    I followed your recipe exactly except i used 1 block of Philadelphia cream cheese which is 225g instead of 250g.
    After baking for 30 min, the inner part of the cake is still a little watery :((( Not sure what went wrong... Could you please advise? TQTQ

    1. Hi Kah Chin, sorry to hear that. This cheese cake cannot eat immediately after baked because it is very moist and soft. It must be kept in the fridge before consuming. Some readers asked me whether they can change to milk if they don't us whipping cream but I don't think it is very suitable. So I suggested to them to use 100g natural yohurt and 50g milk or perhaps you can add extra one egg to it to get a firmer texture.
