Chinese New Year is already over, it's time to take something light after having so many good food for the past 15 days. Here I made use of the bak kwa (pork jerky) leftover to make this fruit salad. I blended the bak kwa to bits, tossed in with the mixed fruits, cute red tomatoes and rocket leaves that I had in the fridge. This salad is so refreshing with the lemon juice and olive oil dressing. I love the sweetness in the bak kwa bits and they blended so well with the fruit salad ...... Addictive and yummy!
