Fruit Salad with Bak Kwa Bits 水果沙拉肉干碎
Chinese New Year is already over, it’s time to take something light after having so many good food for the past 15 days. Here I made use of the bak kwa (pork jerky) leftover to make this fruit salad. I blended the bak kwa to bits, tossed in with the mixed fruits, cute red tomatoes and rocket leaves that I had in the fridge. This salad is so refreshing with the lemon juice and olive oil dressing. I love the sweetness in the bak kwa bits and they blended so well with the fruit salad …… Addictive and yummy!
Fruit Salad with Bak Kwa Bits

Serves: 1 serving
- 60g Bak kwa, blend coarsely
- Some rocket leaves (optional)
- Fresh fruits - peaches, strawberries, sugar prunes, tomatoes
- Lemon juice
- Extra virgin olive oil (optional)
- Place rocket leaves on serving plate.
- Cut fresh fruits to wedges and arrange on top of rocket leaves and place some bak kwa bits in the center.
- Lastly squeeze some lemon juice over the fruit salad (drizzle some olive oil if you prefer). Toss well and serve.
- 60克 肉干，搅碎 （不要太烂，吃起来就会咬到肉干碎）
- 生菜，适量 （可不加）
- 水果 – 水蜜桃 （罐头），新鲜草莓，新鲜西梅，番茄 （适量）
- 橄榄油，少许 （可不加）

Hello hello, really love to see a salad dish here. I have to confess that I have been eating too much of naughty food since we came back from our holidays, yes, only after we came back. What I like about this salad is having bak kwa inside. It adds the saltiness to this dish! Yum!

You're welcome. You can also use the bak kwa bits with mashed potato or pasta.
