Blueberry Lemon Friands 蓝莓柠檬费南雪
After my first try on my new friand pan, Pineapple Friands few weeks ago, I baked friands again. This time with Blueberry and Lemon. The method of mixing the ingredients is different from the previous one and I’m very pleased with the end result. So perfect, fragrant and very moist and not greasy at all. I ate two in one go without feeling any sense of guilt as these are quite healthy without any egg yolks being used. Really yummy!

Ingredients
- 60g Plain flour
- 95g Icing sugar
- 1 tbsp Lemon zest (grated from 1 large lemon)
- 150g Almond meal (ground almond)
- 200g Butter, melted and cooled
- 150g Blueberries, fresh or frozen
- 5 Egg whites, (190-200g), lightly beaten with a fork
- extra icing sugar, to dust
Instructions
- Preheat oven to 190 degrees C. Grease a 12 hole non-stick friand pan with butter or cooking spray.
- Sift the flour and icing sugar into a large bowl then add the lemon zest and almond meal. Stir to combine evenly and make a well in the centre.
- Add the egg whites and butter to the dry ingredients and stir until just combined with a hand whisk, do not overbeat. Then fold in the blueberries with a rubber spatula.
- Spoon the mixture into the prepared pan. Bake for 25 minutes until well risen and golden or insert a skewer into the cake comes out clean.
- Leave the friands in the pans for 5 minutes then carefully lift out onto a wire rack to cool.
- Serve friands dusted with icing sugar or snow powder.

If you don’t have a friand pan, you can use a 12-hole medium muffin tin instead.

Ann, I made these today….they didn't turn out well. I used a muffin tray. They domed during baking and the blueberries burst and overflow all over the tray. Can I tell me what did I do wrong? Nonetheless, my daughter still brought 3 to school to share for her teachers and herself. Thanks!
Ai Li, I think you have filled up the batter too full in the muffin try. That's the reason why the cake will rise too high and deflated after baked. This will makes the blueberries overflow.
Ann, thanks for prompt response. I had also just found out that I forgot to beat the egg white lightly. Does this affect? Thanks anyway for coming to my rescue again.
Is it possible to reduce butter to 120g and top the balance with water? Worried 200g will be too greasy. Thanks!

Hi Chloe, Sorry, I'm not sure about the texture of the friands if you reduce the butter as there is little flour used in this recipe.

Yes you can use blueberry filling but do not add all 150g because the filling is way too sweet. Besides blueberry you can also use fresh strawberry too.

I would like to try but my kids don't like almond. Can I replace ground almond with plain flour or other ingredient?

Hi JJmum, you can use ground hazelnut too. I'm afraid the texture would be a little different if you use plain flour.

Ai Li, Friand is actually small tea cake. Only egg whites and almond meal with little flour are used in the recipe while muffin usually add whole eggs and more flour.

Hi Alvin, I really hope you try this recipe. It is soft and moist because friands are made of almond meal and egg whites. Can always try to add with any other fruits. In fact the texture is better than muffin.

Oh my, I loves any bakes with blueberries in it and I can say your blueberry friands are the 'healthy' version; with only egg whites and they must be super delicious.
