Brownie Cake 布兰妮蛋糕
This rich Brownie Cake is chocolatey, dense and a little fudgy. Easy to prepare with just a few quick stirring, into the oven they go. It pairs beautifully with a cup of hot coffee, and the flavour becomes even more decadent after it has been chilled in the refrigerator overnight.

Brownie Cake
Ingredients
- 45 g butter - melted
- 30 g caster sugar
- 90 g chocolate - melted
- 1 tsp vanilla extract
- 3 egg yolks
- 85 g fresh milk
- 40 g cake flour or plain flour
- 15 g cocoa powder
- 3 tbsp chocolate chips
Meringue
- 3 egg whites
- 1 tsp lemon juice
- 30 g caster sugar
Instructions
- In a bowl combine melted butter, sugar, melted chocolate and vanilla, stir well.
- Add egg yolks, stir and gradually add in milk, stir well mixture till smooth.
- Sieve in flour and cocoa powder, stir well and add chocolate chips into it, mix well.
- Whisk egg white and and sugar together till stiff peaks form.
- Fold 1/3 of meringue into cocoa batter, fold well with a rubber spatula. Then pour batter into remaining meringue and fold well again.
- Pour chocolate batter into a 6 inch lined cake pan. Bake in preheated oven at 170 degrees C for about 25-30 minutes or till skewer inserted into center of the cake comes out clean. Remove cake from cake pan and leave to cool before consuming.

- 材料:
- 45克 融化牛油
- 30克 细砂糖
- 90克 融化巧克力
- 1茶匙 香草香精
- 3个 蛋黄
- 85克 牛奶
- 40克 底筋面粉或中筋面粉
- 15克 可可粉
- 3大汤匙 巧克力粒
- 蛋白霜
- 3个 蛋白
- 1 茶匙 柠檬汁
- 30克 细砂糖
- 做法:
- 将融化牛油, 砂糖, 融化巧克力和香精放入碗中, 搅拌均匀.
- 加入蛋黄, 边搅拌边倒入牛奶, 搅拌至顺滑.
- 筛入面粉和可可粉, 搅匀; 然后加入巧克力粒, 再拌匀即可.
- 蛋白霜 – 蛋白和砂糖打发致硬性发泡.
- 取出1/3蛋白霜到巧克力面糊里翻拌均匀,然后倒回剩下的蛋白霜中,用刮刀翻拌均匀即可.
- 将巧克力面糊倒入6寸蛋糕盘(铺上油纸). 送进预热烤箱摄氏170度烤约25-30分钟或竹签扎入蛋糕内部,拔出没有粘糊,就表示熟了. 出炉后脱模, 放凉享用.
- 烤箱温度和烘烤时间务必根据自家烤箱来定
- 布朗尼蛋糕放入冰箱冷藏至隔天会更加的美味
