Chocolate Biscuits 巧克力饼
How time flies and is already Friday today. What have you planned to bake for your family during the weekend? Why not forget about baking cakes or cookies and make some easy and highly addictive Chocolate Biscuits. This Chocolate Biscuit recipe is super easy to follow and it is fragrant, crispy and crunchy with every bite. What you need to do is to melt the chocolate in double boiler and add in all the remaining ingredients …… I assure you these chocolate biscuits will be gone within a minute once they’re served. I’ll not say more, please read the recipe and the step by step tutorial below and will be very happy to have your feedback if you’ve tried this recipe 🙂

Ingredients
- 120g Semi-sweet chocolate
- 30g Peanut butter, use the creamy or crunchy type
- 40g Almond nibs (toasted) or Almond silvers (toast and cut to small pieces)
- 40g Cornflakes
- 40g Dried Cranberry (cut into smaller pieces) or any other dried fruits
(lined cake pan 9 x 7½ inch all sides up)
Instructions
- Chop semi-sweet chocolate into smaller pieces and melt in a double boiler.
- Add in peanut butter and stir till melted in the chocolate. Then add all the remaining ingredients in it and mix them well in the melted chocolate.
- Pour chocolate mixture into prepared pan and cover with a cling wrap.
- Press the chocolate mixture evenly with the palm of your hand and again press it hard with a lapis press or a drinking glass, to make sure all the ingredients stick together.
- Place cake pan in the refrigerator for about 30 minutes until chocolate set.
- Remove the set chocolate from the cake pan and cut them into required sizes.

- 准备一个烤盘 9×7.5寸半,铺上油纸
- 做法:

- 巧克力剁碎,加热融化。
- 将花生酱加入融化巧克力里,混合均匀至融化。然后把剩余的材料放入,翻拌均匀。
- 将巧克力混合物倒入盘内,稍微抹平;盖上保鲜纸。
- 用手板均匀压平,然后用玻璃杯压实,这样巧克力混合物才会黏在一起,不容易撒开。
- 放入冰箱冷藏约30分钟至凝固。
- 将凝固的巧克力饼脱模,切成块或片状即可享用。

Actually the first batch was gone, I don't have time to store in the container. I stored the second batch in the fridge for only two days… :DD

Just one more question, whether "baking chocolate" is considered bitter chocolate? or semi-sweet? Thank you again 🙂
Baking chocolate is cooking chocolate also known as semi-sweet chocolate like Phoon Huat's brand – Selbourne. The bitter chocolate that I got from PH is looks like chocolate chips. For the chocolate biscuits just use semi-sweet chocolate because it is not really sweet as there are a lot of ingredients in it.
This reminds me of the chocolate biscuit sold in every coffee shop in Lebanon, except that one is made by mixing chocolate and bits of cookie; I love this version especially since I always have corn flakes and nuts in the cupboard sitting idle! Thanks!!
