Easy Steamed Cake 蒸蛋糕
Steamed cake is an easy recipe and they are most delicious when eaten immediately after steaming. You can make them by just combining the few ingredients together with only a handwhisk in just 10 minutes. This easy steamed cake is soft and spongy and this recipe is very versatile. You can make them in any flavour or by adding dried berries or raisins for your morning breakfast or as an afternoon snack. Any remaining cakes can be stored in the refrigerator and reheated whenever you want to eat them.


Easy Steamed Cake
Ingredients
- 1 large egg
- 60 g caster sugar
- 1/4 tsp vanilla extract
- 80 ml fresh milk
- 1.5 tbsp corn oil
- 100 g cake flour or plain flour
- 10 g corn flour
- 1/2 tbsp baking powder
Instructions
- In a bowl, combine egg and sugar together, stir well till sugar dissolved. Add milk and corn oil, stir well again.
- Sift in flour, corn flour and baking powder. Stir till mixture combined.
- Scoop out about 1.5 tablespoon plain batter and mix with 1 tsp cocoa powder or matcha powder (sifted), Mix well and pour cocoa batter into a small piping bag.
- Pour plain batter into 5 cupcake liners. Pipe (cocoa batter) straight parallel lines on top of plain batter. With a skewer pull across the lines in one direction. Then the opposite way to create feather pattern or create your own pattern on the cake..
- Heat up steamer pot with boiling water. Place cakes inside the steamer. Wrap the cover with muslin cloth preventing the water drips onto the cake making it soggy. Steam at medium heat for about 15 minutes and serve.

材料:
- 1个 大鸡蛋 (约70克)
- 60克 细糖
- 1/4茶匙 香草香精
- 80毫升 牛奶
- 1.5汤匙 玉米油
- 100克 底筋面粉或中筋面粉
- 10克 玉米粉 (约1汤匙)
- 1/2汤匙 泡打粉
做法:
- 将鸡蛋和细糖一起搅拌均衡至糖融化。倒入牛奶和玉米油,再搅拌均匀。
- 筛入面粉,玉米粉及泡打粉,搅拌均衡即可。
- 舀出约1.5汤匙白面糊和可可粉或抹茶粉(一定要过筛)混合均匀。倒入裱花袋备用。
- 将白面糊倒入5个纸杯中。将巧克力糊在白面糊上挤上横线,然后用竹签来回拉几条就有漂亮的拉花了或随意画上自己想要的图案。
- 用大火把水煮滚,小蛋糕放人蒸锅,锅盖包上一块干净布,以免蒸水滴入,用中火蒸15分钟即可享用。
- 喜欢的话也可以放一点葡萄干或莓果干到面糊里一起蒸。

My cakes turns out dense. Not soft and spongy. Although the taste wise is ok. So sad.

Just a gentle note: over stirring the batter will develops gluten that causes the cake dense.
