Handmade Piggy Mooncakes 制作小猪月饼
- 150g Hong Kong flour
- 90g Sugar syrup/golden syrup
- 3g Alkaline water
- 38g Peanut oil
- a round 1/8 teaspoon, a skewer, a toothpick and a small plastic sheet.
- 10 Black beans for eyes
- Egg wash ~ one egg yolk with 1/2 tsp water, pass through a sift and mix with little egg yellow colouring
- some mooncake glaze
Please check on the step by step pictorial below (preheat oven to 175 deg C)
- 150g 香港面粉
- 90g 糖浆/黄金糖浆
- 3g 碱水
- 38g 花生油
- 全蛋液 (扫面)
- 10粒 黑豆
- 色 = 1个蛋黄+1/2茶匙水,搅匀过滤+1滴黄色素,搅匀
- 月 饼亮油
工具:
- 1个 1/8尺寸的小茶匙
1支牙签
1张朔胶纸袋
- 把糖浆,碱水,花生油拌合均匀,再倒入面粉里,混合均匀成一个面团,然后盖上保鲜纸,休面40分钟。
- 面团分成5个50g,莲蓉内馅5个70g,剩余面团,用来做猪耳朵,鼻子和尾巴。
- 详细做法和步骤请看下面的图片。(预热烤箱至摄氏175度)
**(26) Return the piggies to the oven and continue to bake for another 10 minutes. Must monitor the piggies in the oven at this moment. Take out the piggies out of the oven immediately when the dough skin starting to crack. **Please keep in mind that all ovens temperature and baking time varies.
(25) 刷蛋液在小猪的身体上。鼻子和眼睛不要刷。放进预热烤箱175度烤5分钟。
(26) 然后将小猪从烤箱取出放凉10分钟,再刷上蛋液包括耳朵和鼻子,眼睛不要刷。然后放进烤箱继续烤约10分钟左右。
这时要盯紧烤箱里的小猪,看到猪仔的身体开始有裂痕就要马上把猪仔拿出。 **烤箱温度和烘烤时间务必根据自家烤箱来定
Leave handmade piggies to cool and store in an airtight container for 3 days for the mooncake skins to soften before consuming.
最后刷上亮油(连眼睛也一起刷)。待凉后等2-3天烤皮回油后,小猪猪就可以见人了!

I made my piggies last few days, but my piggies turned out to have batik print skin, look like as if they have skin decease. I wanna ask, is this normal or there’s some where i did it wrongly?

Hi Ann, I hv tried making these cute little pigs..but my problem is the dough tends to be abit soft. When i pull the dough….it will drop slowly as if its melting away kinda of feeling. Should I add more flour, will it become too dry. I followed your receipe exactly except i use corn oil instead of peanut oil. Thanks in advanced. KYM
Hi KYM,Yes, You can a little more flour to it if you find the dough is too soft and must rest at least 40 minutes or more. The longer you rest the dough, it will becomes firmer.

Hi Corinna, you must first let the dough rest well between 20-30 mins. You cannot do the moulding if the dough is too soft. Secondly might due to high temperature in your oven.

Hi, Yes is the egg wash. Your piiglet will look better after '回油’ in 3-4 days.

hi anncoo, this is the 2nd yr i used ur recipe for doing traditional moon cake but i realise one issue with my moon cake. First of all i wanna said thanks for the wonderful tutorial. My moon cake doing piggy will tend to sag or out of shape after baked if using hong kong flour but i dun have issue using plain flour. Do you happened to have this issue? But the texture using hong kong flour is softer than plain flour.
Hi Bernice, Thank you for trying my recipe. The dough is too soft to handle and HK flour is more fine than plain flour. Try to rest the dough a little longer before shaping out the piggy.

Hi anncoo, thanks because using Hong Kong flour the texture is softer than plain flour.
Hi Bernice, rest the dough for 6 hours, that was quite long and I didn't place the dough inside the fridge. Since you said no problem to use plain flour, then why not use it.

I followed e timing exactly and my first batch's colour looks pretty nice but my 2nd batch's colour looks under cooked even with e exact same timing.
I'm waiting to evaluate e colour tmr after giving it time to 回油。of it still appears undercooked/doesn't taste right, would it be alright to bake it again? Thanks:)

Since your piggies are already out of the oven, better not to rebake them again. Afraid the over baked will crack the skin. Just leave them for a few days and wait for the skin to '回油’。

This year, I used your piggy mooncake recipe and the piggies turned out so cute. Sister's friends can't stop taking photographs of the piggy moonies. The piggies were delicious. I actually was thinking about buying a wooden or plunger mooncake moulds to make mooncakes in future but now I changed my mind to only make piggy shape. Anyway, I still have the pink plastic moulds though they do not give sharp image.
