Meat Patties and Preserved Cucumbers
Preserved cucumbers are usually served with congee but they also work as well with meat patties. It is really easy to make these meat patties with little ingredients used and only about 8 minutes of frying or on your bbq grill. You can serve these meat patties as snack or a side dish meal with hot rice or place it inside a toasted bun with a slice of cheese, tomatoes and mayonnaise as a burger.

Ingredients
- Ingredients: makes 14
- 1 canned Preserved cucumbers 味金花瓜
- 300g Ground pork with some fat
- 1 tsp Garlic, chopped
- 1 tbsp Corn flour
- 1 tbsp Spring Onion
- 1 Egg
- Seasoning:
- ½ tsp Sesame oil
- ½ tsp Chicken powder
- a dash of pepper
Instructions
- Rinse the preserved cucumbers a few times and squeeze out excess water then cut to small pieces.
- Put all ingredients and seasoning into a mixing bowl. Stir until well combined and very sticky. Marinate in the refrigerator for 15 minutes.
- Heat up frying pan and add little oil into it. Form the meat mixture into small balls, place them into frying pan and gently flatten it with your finger tips.
- Pan fry the meat patties at medium heat until both sides are golden brown and cooked through, dish and drain well on absorbent paper towels.

rather interesting combo mixing some pickled cucumbers into the meat..i would enjoy this a lot as a snack!

Hi Ann, I love fish cakes and I'm also loving your preserved pickles!! I make a similar dish of salmon cakes and use the juice from pepperoncini as the condiment! YUM! Time for lunch!

Hi Ren, you can the preserved cucumbers in most local supermarket or at the First Emporium in People Park Complex.
Meat patties make such welcome side dishes or snacks. Much bite with the pickled cucumbers. Great recipe.
Ann, I tried to come during lunch time but no luck due to the connection was too slow today. Doesn't matter,its dinner time now, I can still enjoy some patties if they are some left for me. Yummy!

I don't think I've ever seen preserved cucumbers. How do they differ from pickles? I hate to show my ignorance but maybe, just maybe I'm not the only one 🙂

Maureen, This preserved cucumbers are made in Taiwan and it is crunchy and not too salty compare to the other pickles. You might find these pickles in Asian grocery store.
