Banana, Cranberry and Apple Bread 香蕉,蔓越莓 & 苹果面包
- 1 ½ cups flour (Plain flour) ~ 200g
- ½ tsp baking soda
- 1 tsp baking powder
- ¼ tsp salt
- ¾ cup sugar ~ 140g (I used 130g sugar)
- 2 eggs
- ½ cup + 2 tbsp corn oil ~ 100g
- 4 tbsp milk
- 1 tsp vanilla extract
- 1 cup dried cranberry ~ 125g
- 1 apple – grated (green apple)
- 3 large bananas – mashed ~ 235g without skin on
- Line and grease a loaf pan. (I used cooking spray to grease the pan) Preheat the oven to 350 degree F (170 deg C).
- In a mixing bowl, combine flour, baking powder, baking soda, salt and sugar. Mix well and set it aside.
- In another mixing bowl, combine eggs, milk, oil, vanilla, grated apple and mashed bananas. Mix it well with a big spoon. Add in the dry ingredients into the eggs mixture. Mix until well combined.
- Lastly add in dried cranberries. Mix well and pour it into the baking pan. Bake for 50 - 70 minutes or skewer inserted into bread and comes out clean.

*松松软软又很湿润的香蕉面包,非常容易做!只需把所有材料混合均匀就可以拿去烘烤了!
材料:
- 200克 低筋面粉
- 1/2 茶匙 苏打粉
- 1 茶匙 泡打粉 (发粉)
- 1/4 茶匙 盐
- 130克 细砂糖
- 2个 全蛋
- 100克 玉米油
- 4 汤匙 牛奶
- 1 茶匙 香草香精
- 125克 蔓越莓干
- 1粒 青苹果 (磨成泥)
- 3条 熟香蕉 – 去了皮 -235克 (压烂)
做法:
- 准备一个长方形烤盘,底部铺纸。预热烤箱至摄氏170度。
- 将粉类及盐一起过筛到碗里,备用。
- 在另一个大碗,用橡皮刮刀把鸡蛋,牛奶,油,苹果碎泥和香蕉混合均匀。然后倒入粉类,再拌匀即可。
- 最后加入蔓越莓干,再拌匀便可倒入烤盘。 送人预热烤箱栲约50-70分钟或竹签插面包入内部,拔出没有粘糊,就表示熟了。
**加了粉类搅拌至看不到粉末就可以了。过度的搅拌面粉会起筋使烤出来的体质会很扎实。
That looks great ! Love the addition of cranberries and apple as it adds color and texture to the bread 😉 I have the same question every time I bake banana bread 😀 Instead of 60 minutes , I usually cook it for 10 to 20 minutes more 😛
Anne, yes sometimes we pay full attention on the baking time especially with very wet ingredients.

I have a playdate for kids tomorrow so I was going to bake banana bread but didn't know 23rd is National Banana Bread day! My kids like raisins but I'm going to buy an apple and cranberries and try this one instead. Looks so good! I can't wait to try it!

I love bread! This looks really yumm, hmm well with more banana and apple juice I am sure they combine really good together and gonna be very moist instead of dry texture that normal bread has. Oh my I am craving for bread now ^^

I tried this and it really taste yummy but the only thing is that my bread doesn't rise and the texture is still very sticky. Not soft enough. Where did I do wrongly? Should I on the top/bottom/both burner in the oven? Thanks
Hi Katie, Your bread is not fully cooked yet. You may bake it another 5-10 mins little longer. Insert the skewer into the bread, make sure it comes out clean.

Hi Ann, I tried this recipe today and it turned out delicious. I especially like the tartness of the cranberry as it balanced out the sweetness of the bananas. I cut down the sugar to 110g as I dont like it too sweet and it turned out just right for me as my overripe bananas were already very sweet However, when I compare my bread with your picture, mine seems denser whereas yours has more air pockets. The texture of my bread also taste more like a dense cake. Nevertheless, it still tastes very good. Thanks for sharing such a simple and delicious recipe. Durian is in season now. Maybe I will replace bananas with durian and make a durian bread.
Chinese versionew of the recipe mentombed 低筋面粉 whicj is cake flour but the ingredients in the English version stated plain flour.
Hence, seek your confirmation on the correct flour used for this recipe.

Hi Carol, Sorry for the confusion. In fact I’m rather confused about the ‘面粉’ in Chinese too. I always put plain flour ‘普通面粉’ in my Chinese recipe last time but many readers from Facebook asked me what is ‘普通面粉’?So after some google searches, many Chinese bloggers put ‘低筋面粉’. To me cake flour is finer and better than plain flour but both type of flour can be used.

Yes Ann, I used fresh jackfruit. I bought a packet from the wet market ($2) and was about to eat them, and I thought why not use it for the bread and it turned out wonderful.Amanda

This bread looks lovely. I think the bananas, cranberries,and the apples sound great together, I would never of thought of combining the three of them in a bread.
Hi Ann, I actually tried out this receipe last weekend, and it works.. the receipe is so easy to follow..just wondering on the vegetable oil, do you mean 100g of it? or only 2 teaspoon?mine came out moist, but bit too on the sweet side, maybe the banana it self is very sweet.. i might reduce the sugar next try..Thanks for sharing this, Ann!
Hi Bobo, I followed Gert's recipe to T and because I'm not familiar with cup measurements, so I just measured and weighed the ingredients. The vegetable oil is correct 100g.:)Of course you can reduce the sugar a little or cranberries if you find its too sweet.
I love that you added cranberries and green apple in the banana bread. A perfectly dense and moist bread.

Ann, I can't believe I missed Banana bread day! This combination looks great, and I have used her (Kitchen Snippets) banana bread recipe before too. I like using dried cranberries and cherries (not together though). I wish I had some now!
