Orange Chocolate Cake – 2
This is the second time I made this cake….Orange Chocolate Cake (click here for recipe)…specially for my guests from Taiwan and Shanghai.
So, before rushing to the airport, I did the final touch up but not as good as I expected. But anyway, my guests like it very much:D
kitchen note: make 1 1/2 recipe of the ganache cream if your sponge cake is too high.

First of all, I did not cook enough ganache cream because my sponge cake was quite high due to the large eggs…so I cook another half portion of the ganache cream recipe.
Secondly, my mind was quite blank at that time and I don't know what to decorate on the cake.(I hate rushing when I am doing something in the kitchen)
After cooking the cream, leave to rest for awhile. Pour enough cream on to the top of the cake and use palette knife to spread evenly. When the cream drip to the sides, use palette knife or scrapper to make a quick turn by using the turn-table. Put the cake in the fridge for about 5 mins for the cream to set. Then pour more cream on to the cake again, so this time the cream will set quick enough and easier for you to handle. Use kitchen towel or a clean wet cloth to wipe away the extra ganache cream.

Yes, you're right. The guests are my sister in law and nephews, so at least I have to bake and cook something at home. My family also show them around Singapore in the past three days….I am very happy about this gathering no doubt I am dead tired.
Anncoo, what do you mean by the final touch up is not as good as expected? This is perfection? How did you get the sides so neat with no ganache dripping all ove, I hate working with cake that needs to be covered with ganache. It's so messy!
Your house guests are lucky to be visiting such a great baker. This looks delicious. You deserve a break so I hope you get to eat out with your guests at some amazing places.
