Potato Sardine Puffs 酥皮薯泥沙丁鱼
School holidays have already started and you have no idea what to make for your kid’s tea break? You can try to make this easy and healthy delicious Potato Sardine Puffs with store bought frozen puff pastry which you can make at home in a relatively short time. You only need some time to boil the potatoes till soft and that takes about 20 -25 minutes. Another easy way is to place the ingredients for the filling in the food processor, blend them in a few seconds, wrap them up with the puff pastry and send them to the oven to bake for about 25 minutes. Then you can enjoy this yummy snack for tea break with everyone at home 🙂


Potato Sardine Puffs
Ingredients
- 1 can sardines
- 350 g potato
- 150 g onion - diced finely
- 1 tbsp fresh coriander leaves (optional) - cut finely
- 4 tbsp mayonnaise
- 3/4 tsp salt - or to taste
- dash of pepper
- 1 packed frozen puff pastry - thaw pastry in chiller for a few hour before use, only need 2 large sheets
- 1 lightly beaten egg
Instructions
- Wash potatoes and peel skin. Boil potatoes with a pinch of salt until soft and tender for about 20-25 minutes. Drain well and place soft potatoes in a food processor together with the chopped onion, blend well with mayonnaise to smooth.
- Mash the sardines with a fork and place the sardines with 1 tablespoon of the tomato sauce from the can and chopped coriander leaves into the potato mixture. Blend mixture to smooth. Then transfer to a large bowl. Lastly add salt and pepper to taste, set aside.
- Place puff pastry sheet on a lightly floured table top and use a pizza cutter to cut pastry sheet into 4 equal square sheets.
- Egg wash the border and fold the edges together. Then use fork press down the edges to seal the border and using a sharp knife to cut small slits on top of the pastry. Place the potato puffs on a lined baking tray and egg wash the tops of each puff. Place coriander leaves on puffs.
- Bake at preheated oven at 200C for about 25-30 minutes or until golden brown.

- 1汤匙 芫荽,剁碎 (可不放)
- 4汤匙 美乃滋酱
- 3/4茶匙 盐或适量
- 胡椒粉 适量
- 2片 冷冻酥皮,(放在冷藏室解冻数小时-只需2大片)
- 1粒 鸡蛋,打撒
- 马铃薯洗净去皮。放入沸水中(加入少许盐)煮约20-25分钟至软,沥干水分。将马铃薯放入料理机里和洋葱,美乃滋酱一起搅拌至滑。
- 用叉子把莎丁鱼稍微压碎和罐头里的番茄酱(1汤匙),芫荽都放入马铃薯泥里,再搅打均匀至滑即可。然后把混合物倒入一个大碗中,加入适量的盐和胡椒粉,拌匀即可。
- 台面撒些面粉,放上酥皮,用pizza刀切出四个小方格。
- 放入约2汤匙马铃薯馅料在皮上(请看图),用蛋液涂边。将酥皮对折,用叉压实边缘。
- 烤盘放上牛油纸,将酥皮薯泥莎丁鱼放上。表层用小到割几个小洞,扫上蛋液,放上2小片芫荽点缀。.
- 放入预热烤箱200度烤约25-30分钟或烤至皮面金黄色即可。
Ann, can I prepare in advance and put in the fridge? If yes, do I egg wash before putting into the fridge? Do I have to bring to room temp before baking? Thanks!
Hi Ai Li, you can prepare the puffs few days ahead and store in the freezer. Bake them straight to the oven, no need to thaw. Egg wash the puff just before baking.
