Apple Blueberry Pound Cake 苹果蓝莓磅蛋糕
Here comes a perfect balance of Apple Blueberry Pound Cake. It’s moist, light soft texture, bursts of sourish juicy blueberries and apple chunks. The cake smells heavenly during baking. The cake also tastes better the next day after being chilled in the refrigerator. Let the cake thaw for about 30 minutes at room temperature and it’ll stay moist and soft. It’s definitely another keeper recipe!

Apple Blueberry Pound Cake
Ingredients
- 150 g cake flour or plain flour
- 1 tsp baking powder
- 150 g butter - soft to touch
- 120 g caster sugar
- 1 tbsp lemon juice
- 1 lemon zest
- 1 tsp vanilla extract
- 3 large eggs
- 250 g fresh blueberries
- 1 red apple - peeled, chorded and chopped
Instructions
- Preheat oven to 170 deg C. Line a 9 x 4 inches loaf pan with parchment paper. Sift flour and baking powder together and set aside.
- Beat butter and caster sugar together in a cake mixer till light and fluffy, takes about 8 minutes. Add vanilla extract, lemon juice and lemon zest, mix well. Then add eggs, one by one, until mixture incorporated, mix well.
- Sift in flour mixture the second time into egg mixture in 2 portions and fold through completely with a rubber spatula. Add chopped apple and fold well.
- Pour half of the batter into prepared loaf pan and add blueberries over it. Then top up with the remaining batter and smooth evenly with a rubber spatula. Add more blueberries on top.
- Bake in the preheated oven for about 40 minutes or a skewer into the center of the cake comes out clean.
- Remove the cake in loaf pan after baked, then cool the cake completely on wire rack. Lastly dust some snow powder or icing sugar over the cake before slicing.

- 材料:
- 150克 底筋面粉
- 1茶匙 泡打粉
- 150克 牛油,稍微软
- 120克 细砂糖
- 1汤匙 柠檬汁
- 1 粒 柠檬皮屑
- 1茶匙 香草香精
- 3个 大鸡蛋
- 250克 鲜蓝莓
- 1颗 红苹果 削皮去核, 切小块状
- 做法:
- 预热烤箱至摄氏170度。一个长方形 (4×9寸)蛋糕盘,铺上烘焙纸。面粉和泡打粉一起过筛到碗里,备用.
- 用电动打蛋机将牛油和砂糖打起至松发及泛白, 约8分钟。加入香精, 柠檬汁和柠檬皮屑, 搅匀. 然后鸡蛋,一个一个的加。每加一个搅匀以后再加下一个搅拌均匀即可.
- 第二次筛入粉类到蛋糊里(分两次筛入), 用刮刀翻拌均匀, 然后参入苹果丁, 混匀即可.
- 将一半的面糊倒入蛋糕盘里, 抹平. 接着铺上适量的蓝莓, 接着倒上剩余的面糊, 再用刮刀抹平表层, 最后放上蓝莓即可.
- 送入预热烤箱烘烤约40分钟或竹签扎入蛋糕内部不沾糊就可以了.
- 蛋糕烤熟后,取出蛋糕放在凉架待凉. 最后撒上适量的防潮粉或糖粉在蛋糕上即可切片享用.
- 烤箱温度和烘烤时间务必根据自家烤箱来定
