Prawns Omelette 虾仁炒蛋
My family loves prawns omelette with onion. It is the most simple, easy and delicious and it can be done within 10 mins. I usually cook this dish whenever I run out of idea what to cook for lunch or dinner and it goes well with rice or porridge too.

150-200g Prawns – shelled, cleaned and cut cubes (not too small)
and season with:
1/8 tsp Salt & dash of pepper
1/4 tsp Light soy sauce
1/4 tsp Sesame oil
1 Onion – shredded
3 Large eggs – lightly beaten with some light soy sauce about 1/2 tsp and dash of pepper
- Pour some oil in a non-stick pan and fry onion still soft.
- Add prawns and fry till just cooked.
- Spread out onion and prawns evenly, then pour beaten eggs over it.
- Swirl pan around to spread the omelette evenly.
- When the eggs have set about 2-3 mins, flip the eggs over and cook for another 2-3 mins.

Ann,this is the dish with your favourite prawn. I always get to eat fried egg with onion or with egg, not combination of both, must try next time.

Thanks for posting this Anncoo! I have been making the same old boring turkey sandwich for the Mr. to take to class for lunches. We don't live close enough to the base for him to come home so he stays there to eat. This would be perfect to give him for lunch.

hey anncoo, this looks good. the eggs nicely pan fried till brown. My family loves eggs. Somehow prawns omelette never come to our mind but it is a wonderful combination. Will ask my mum to make this, or maybe I can try making it myself =]

i just simply love prawns cooked in any way.

I really love seafood with eggs. I've had crab omelette but now prawns. Wish I could try some of yours :).
