Sesame Pumpkin Cake 芝麻金瓜饼
This Sesame Pumpkin Cake (芝麻南瓜饼) has a nutty aroma flavour fully coated white sesame seeds. It only requires 4 ingredients – mashed pumpkin, sugar, glutinous rice flour and white sesame seeds without adding any egg, butter or milk. The pumpkin cake is chewy and crisp on the outside. This is completely gluten free and vegan. No deep frying or pan fried, just pop the whole tray of pumpkin cakes into the oven and bake for 30 minutes!

Sesame Pumpkin Cake
Ingredients
- 420 g mashed pumpkin
- 55 g caster sugar
- 350 g glutinous rice flour
- white sesame seeds - for coating
Instructions
- Cut about 520g pumpkin to chunk and steam for about 20 minutes till soft, and measure to get 420g cooked pumpkin. Mash cooked pumpkin and stir well with sugar.
- Pour in glutinous rice flour and knead pumpkin to a dough and not sticky to hand.
- Divide dough into 20 pieces round balls, about 40g each.
- Spray some water over pumpkin balls, then coat with white sesame seeds.
- Place pumpkin cakes on lined baking tray and gently flatten slightly with your palm. Brush some oil over pumpkin cakes.
- Bake in the preheated oven at 180 degrees C for 30 minutes.

- 材料:
- 420克 熟金瓜,压烂
- 55克 细砂糖
- 350克 糯米粉
- 白芝麻,适量
- 做法:
- 将约520克金瓜切块蒸20分钟至熟,然后取出420克金瓜压烂与砂糖搅拌均匀。
- 倒入糯米粉,搓揉均匀至成面团及不粘手。
- 将面团分出20份,搓匀成小圆球约40克一粒。
- 金瓜球上喷上少许水然后均匀裹上白芝麻。
- 将金瓜球排放在烤盘上(底部铺上油纸), 用手掌轻轻压扁然后表面刷上适量食油。
- 送入预热烤箱摄氏180度烤30分钟即可。
